One Pot Creamy Parmesan Noodles with Asparagus

Place the spaghetti, water, salt, butter, and mustard...

Place the spaghetti, water, salt, butter, and mustard powder into a medium to large sauce pot. Bring the pot to a simmer over medium heat, stirring frequently. Put the asparagus in during the last 3 minutes of cook time, and let simmer until the pasta is tender. Reduce the heat to low.

Creamy Peanut Udon Noodles

oz fresh or frozen Udon noodles

peanut butter

soy sauce

rice vinegar

sesame oil

maple syrup or brown sugar

garlic,

ginger

noodle cooking water (plus more as needed)

peanuts,

green onions, chopped,

chili flakes

Cook the Udon noodles according to package directions until al dente. Before draining, reserve at least 1/2 cup of the hot noodle cooking water. Drain the noodles and set aside.

While the noodles cook, prepare the sauce. In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, minced garlic, and grated ginger. Whisk these ingredients together until well combined.

This is the secret for a sauce that actually sticks! Gradually add the reserved hot noodle cooking water, about 2 tablespoons at a time, to the sauce mixture. Whisk vigorously after each addition until the sauce is smooth, creamy, and has reached your desired consistency. The hot, starchy water helps to emulsify the sauce, preventing it from being too thick or too thin and ensuring it will beautifully cling to every noodle strand. You may need a bit more or less water depending on your peanut butter and desired thickness.

Add the drained Udon noodles to the bowl with the prepared sauce. Toss thoroughly, using tongs, to ensure every single noodle is completely coated with the creamy peanut sauce. The warmth of the noodles will also help the sauce bind perfectly.

Divide the coated noodles among serving bowls. Garnish generously with chopped roasted peanuts, fresh green onions, and chili flakes or crispy fried garlic/shallots for extra flavor and crunch. Serve immediately and enjoy your perfectly coated, delicious noodles!
