Oreo Peanut Butter Pie Cups

Oreo ‘Double Stuf’ cookies (divided)

heavy cream

cream cheese (at room temperature)

peanut butter

condensed milk

Place 8 cookies in a zip-top bag and crush them to fine crumbs with a rolling pin; divide crumbs between four 7.5 ounce dessert cups, about 3 tablespoons per cup.

In a large bowl, beat the heavy cream with an electric mixer until stiff peaks form.

Place the cream cheese and peanut butter in a mixing bowl and beat until smooth. Add 7 ounces sweetened condensed milk and beat again. Fold in half of the whipped cream. Spoon or pipe the mixture over the cookie crumbs in the dessert cups.

Fold in the remaining 1 tablespoon condensed milk with the whipped cream. Spoon or pipe the cream over the filling in each cup. Garnish each cup with 1 whole chocolate sandwich cookie.

Make the best homemade roasted peanut butter.  With just two ingredients, and the optional ingredient of honey, this peanut butter can be made creamy or chunky!

Homemade Peanut Butter

honey (optional)

Preheat oven to 350°F (175 degrees °C). Spread peanuts on a baking sheet. Sprinkle with salt and bake until golden brown, about 6-10 minutes. Stir every 2 minutes to get an even roasting.

In a food processor (using a metal blade), scrape baking tray with peanuts and salt, and process for about 2 minutes, or until peanuts start to form a ball.

Scrape sides and reserve 1/3 cup of ground peanuts if chunky peanut butter is desired.

Add honey at this point, if desired, and continue blending to desired consistency, 2-3 more minutes.

Remove creamy peanut butter from food processor and mix reserved peanuts back into the mix (if desired).
