Creamy Polenta with Parmesan Cheese Recipe

Bring the water and milk to a boil in a heavy-duty sauce pan or small Dutch oven. Stir in the salt.

Gradually sprinkle the polenta into the pan while whisking at the same time. Turn the heat to a very low simmer, cover and continue to cook the polenta for 25-35 minutes, until it&#39;s thick, fluffy and begins to pull away from the sides of the pan. Stir frequently so it doesn’t stick to the bottom of the pan.

When it's done, remove from the heat and stir in the butter, cheese and additional salt to taste if needed.

Serve warm, sprinkled with rosemary and additional cheese, if desired.

Creamy Polenta Recipe in the Slow Cooker

polenta (dry)

vegetable broth

milk (any type (I like oat milk

butter oil

salt

black pepper

herbs garlic

Place the polenta with the broth, water, and salt in a slow cooker and cook on low for 1 ½ hours or on high for 50-60 minutes.

When most of the liquid is absorbed, add the milk and stir until well mixed. It will be fairly creamy and loose.

You can serve immediately or continue cooking to thicken it a bit more. Cook until it reaches the desired consistency you want for your polenta.

Boil the stock and milk

Bring the chicken stock and milk to a boil in a medium pot over medium-high heat.

Cook the polenta

Stir in the polenta, then reduce the heat to medium low. Cook, stirring often, until tender and creamy, 30-40 minutes.

Combine ingredients

Stir in the butter, parmesan, salt, and pepper until combined.

Serve and enjoy

How is it possible this recipe has anything BUT five stars?!!!! Youll never even want a mashed potato again. Its heaven. Make a roast or braised short ribs, put it over this polenta and watch your dinner guests drool

This is so good. We have made it multiple times, and its on our favorites list.

Wasn’t a huge fan of this recipe. Made it exactly as it is written and thought the Parmesan was too strong. I used cheddar next time and just realized the chicken broth was too much. Just wasn’t a fan of the mix of ingredients overall. Bummer bc I normally love polenta/grits.

The grocery store was out of polenta, so we used yellow stone ground grits instead.  Served your Italian Pot Roast on top and it was perfect!  Delicious by itself and perfectly complimented the Roast.  I would note that it took nearly 30 minutes to bring 6 cups of liquid to a simmer over medium heat.  Will start sooner next time.

Perfection!  I could eat this everyday!!!
