This easy brown rice risotto with mushrooms turns the traditional risotto upside down! Using a “secret” ingredient to give regular brown rice a look and feel much like cooked arborio rice. I’m here to show you how to make risotto with brown rice for a simple weeknight meal.

Creamy Brown Rice Risotto

Cook brown rice according to the package instructions. If you’re using brown rice in bulk, boil 2 cups of water per 1 cup of rice then let simmer with the lid on for 40 minutes.

Heat vegetable broth over medium heat in a small saucepan.

At the same time, combine beans, 1 Tablespoon of olive oil, 2 tablespoons of veggie stock, 2 Tablespoons of nutritional yeast, and salt in a food processor until smooth (like hummus). Set aside.

In a large saucepan, heat mushrooms with 1 tablespoon of olive oil with salt and pepper until lightly browned, about 3 to 4 minutes.

Once the mushrooms are cooked, reduce heat and add cooked brown rice. Then add the warmed vegetable stock and let simmer for 4 to 5 minutes. Once the time is up, add bean puree to the pan and thoroughly combine. (Note: you may not need to use the entire amount of puree, it is up to your discretion.) Add garlic powder and salt and pepper to taste.

Once risotto is thickened to your liking, remove from heat, top with parsley if using and serve.

Just add 5 minutes and 2 ingredients to your regular rice cooking process, and have the best rice ever. Everyone loves this buttery rice that&#039;s loaded with so much flavor, and there&#039;s a vegan option included.

Creamy Rice with Butter &amp; Chicken Broth

Tbsp butter

long grain rice (rinsed)

chicken broth (hot)

Melt the butter in a frying pan over medium heat.

Add the rice and fry for 2-3 minutes until most, or all, of the butter has been absorbed.

Pour in the hot chicken broth, then bring to a simmer, cover, and lower the heat to low. Simmer for 20 minutes or until all or most of the liquid is gone and the rice is cooked through. Remove from the heat and let rest for 5 minutes, then serve.

This is the BEST risotto recipe ever, and it&#039;s my most requested dish from family and friends. Rich and creamy, it reminds me of the risotto we&#039;ve eaten in Italy but made easily in your very own kitchen. With plenty of freshly grated parmesan, a pinch of saffron if you have it, and enriched with some dry white wine, this risotto is the perfect accompaniment to chicken, salmon, or shrimp, or as a standalone dish to wow!

The Best EVER Risotto Recipe

chicken stock (plus more if needed)

saffron

butter (softened, divided)

onion (finely chopped)

garlic (finely chopped)

risotto rice (see Notes)

dry white wine (or water)

parmesan cheese (room temperature, divided)

salt

black pepper (to taste)

In large saucepan, bring chicken stock to boil, then reduce to low simmer. Transfer 1 ladle of stock to small bowl. Add saffron threads and set aside while saffron infuses.

Meanwhile, melt 4 tablespoons butter in second saucepan over high heat. Once butter begins to foam, add onions and cook 2 minutes, stirring frequently. After 2 minutes, add garlic and cook 1 additional minute. Note: cook only until onions and garlic are softened, not browned!

Add rice to saucepan with onions and stir until grains begin to swell and burst. Add white wine to deglaze pan, being sure to scrape any browned or stuck bits from bottom of saucepan. Let simmer until liquid is mostly reduced.

Once liquid is mostly reduced, stir in 1 to 2 ladles of stock, all of saffron-infused stock, salt, and pepper to taste. Stir constantly over low heat until liquid has been fully absorbed.

Continue adding stock in small increments, letting the rice absorb the liquid completely before adding more. Stir constantly and taste frequently, until all stock has been added and absorbed. After about 20 to 25 minutes, rice should be just tender (not mushy!) and risotto should be golden and creamy.

Remove saucepan from heat. Stir in ⅔ cup of parmesan cheese and remaining  1 tablespoon butter. Mix until butter has melted completely. Taste and season as needed, then transfer to serving plates or bowls, top with remaining parmesan cheese, and serve hot.

Savory Rice with cream (Egyptian Meammar Rice)

unsalted butter (divided.)

chicken tenders. (Note1.)

Table spoon Mascarpone cheese.

Chicken broth (any type.)

Start by washing the rice and soak in water for 15 minutes.

Preheat the oven to 350F.

Meanwhile in a pan over medium heat, melt 1 Tablespoon of butter and brown the chicken tenders, 2-3 minutes each side, season with some salt and pepper, set aside.

Drain the rice, add salt, pepper, sour cream, Mascarpone cheese and the remaining 1 Tablespoon of butter, mixing all very well until all rice is covered well.

In a deep oven dish, authentically a clay one, add about 5 Tablespoons of the rice mixture to cover the bottom and spread evenly.

Add the chicken pieces if using, then cover with the remaining rice, level the surface.

In a pot over medium heat, add the milk along with the broth and bring to a boil, turn off the heat and season with a dash of black pepper.

Add the hot liquids to the rice , place the dish into a bigger oven dish or pan filled halfway with water.

Bake in the oven for almost an hour until the rice is fully cooked and the surface turns golden brown.

Let it cool down and serve.

Baked rice in clay pots, loaded with butter, milk and cream, can be savory or sweet. Today I am showing you the savory one. Incredible texture and heavenly taste. Meammar rice in one of the authentic, traditional Egyptian rice recipes, as old as Egypt I guess :). Meammar means loaded, and as you can see authentically, this rice is loaded with full cream, ghee and full fat milk. The slow cooking of rice in the oven gives it a lot of time to soak up all these flavors, to come up unique, fluffy and tastes heavenly good.

SAVORY RICE WITH CREAM (EGYPTIAN MEAMMAR RICE)

Creamy Parmesan Rice Recipe

tablespoons butter

cups vegetable stock

whole milk, divided

teaspoon white pepper

cups long grain rice

tablespoon lemon zest

cup parmesan cheese, shredded

fresh parsley, chopped

Combine butter, vegetable broth, 1 1/4 cups of whole milk and white pepper in a pot with a tight-fitting lid. Bring the mixture up to a simmer, then add 1 1/2 cups long grain rice.

Return the pot to a boil, then reduce to a simmer and cover. Cook for 18-20 minutes, until the liquid has absorbed and the grains are cooked through. At the end of cooking time, I test the rice to determine if it needs additional liquid or time to fully steam through. If needed, I'll add 1/4 cup additional milk, stir, cover and cook for an extra 2-3 minutes.

Once the rice mixture has finished cooking, remove from the heat, add lemon zest and parmesan, stirring to combine. Then add the final 1/2 cup of whole milk and 2 tablespoons of parsley. Taste and adjust seasoning. 

Serve with additional lemon zest and parsley for garnish. 

Had no idea you could cook rice in milk. Turned out great. I used chives because I didn't have parsley but everyone loved it. Will definitely make again.
