I’ve made this with skin on and boneless, skinless chicken thighs. It’s superb! I can’t see how salmon wouldn’t be the same. I’ll be trying salmon this week, with spinach, tripling the sauce, all over keto-friendly noodles. Don’t keep putting it off; try this easy, flavorful dish!

Love this recipe! Definitely a favorite of ours. I add a big splash of dry white wine and it takes the sauce to the next level!

I did not feel the cook time was long enough, plus when following these directions (and not dumping out the excess olive oil before adding the butter and other ingredients) the sauce was very oily and not creamy like I had expected. My husband enjoyed this more than I did. I doubt I will make it again.

This was a pleasure to make! Absolutely fun, and directions were clear and it rolled ! I love recipes that work like this one does. I felt that as one thing was simmering I had the right amount of time to prep the next as my husband prepped the accompanying Veges and set the table. Clock work to the max.  But better than that, YES I felt like I should throw flour on my face like I had been working for hours on this. It was so quick! Mouth watering.  My fresh basil was a star, even though the salmon enjoyed was delicate tasting.   I might cut the cream next time as I have an agreement with cream that we agree to disagree ( I am slightly unaccepting).   As a gluten free eater, this salmon recipe is a keeper! Can’t wait to cook it for the family !

Creamed Spinach Stuffed Salmon Will Be Your New Favorite Weeknight Dinner

If you love spinach artichoke dip then you will love this salmon! This salmon is topped with spinach artichoke inspired dip and baked until creamy.

Artichoke and Spinach Roasted Salmon

cream cheese,

Tbsp. plain Greek yogurt (can sub with sour cream

Tbsp. Parmesan cheese

garlic clove,

baby spinach

artichoke hearts

Kosher salt and fresh black pepper

mozzarella cheese, optional

Fresh chopped parsley, for garnish, optional

Add butter to a 9X13 baking dish and place in the warming oven for a few minutes. When the butter is melted take out the dish. Place the salmon in the dish and spoon the melted butter over the salmon. Sprinkle the salmon with salt and pepper. Set aside.

In a bowl, combine the cream cheese, Greek yogurt, parmesan cheese, and garlic. Stir in the spinach and artichokes. Season the mixture with salt and pepper, to taste.

Spread the spinach artichoke mixture evenly over the salmon. Optional: for an extra cheesy top, sprinkle 1/4 cup shredded mozzarella cheese over the salmon. 

Bake for 20-25 minutes. Start checking the salmon for doneness around 18 minutes. Salmon should be opaque and flake easily with a fork. The top will be lightly golden brown. Garnish with parsley before serving.

This was so good. Followed recipe EXACTLY except cook on grill  with a whole salmon fillet

Pan-seared crispy salmon fillets in delicious creamy spinach, olives, and sun-dried sauce using coconut cream.

Creamy Tuscan Salmon

tbsp. Olive Oil

lb. Salmon Fillets (3 or 4 salmon fillets)

Italian Seasoning

Salt

Garlic (peeled)

Sun-dried tomatoes (chopped)

Fresh Spinach

Pitted green Italian Olives

Vegetable broth

Coconut Cream

Rinse the fish fillets and pat dry using a kitchen towel. Season the salmon with Italian seasoning, salt, and ground pepper. (Alternatively, you could add the Italian seasoning later in the coconut cream sauce.)

Heat a large non-stick pan. Add oil and heat until shimmering. Place the fish and cook until nicely golden brown about 4-6 minutes each side.

Remove the fish from the pan and set aside. Using the same pan, add garlic and sauté until fragrant.

Immediately add chopped tomatoes, olives, and spinach. Pour in the broth and stir well.

Reduce the heat to low and cook stirring constantly until the spinach is wilted. Now stir in the coconut cream and cook for 1 minute more.

Carefully return the cooked salmon to the pan, nestling it into the sauce and cook until heated.

Taste and adjust the seasonings according to your taste. Transfer the salmon to the serving plates.

Pour the sauce on top of the fish and serve warm.

Tsp Dried Oregano

tbsp Fresh Lime Juice

Season the salmon with salt and pepper on all sides.

Heat coconut oil in a large non-stick pan over medium heat. Pan sear the salmon until golden brown, about 2-3 minutes per side. The salmon can be undercooked at this point as we will continue to cook it later into the sauce. Set aside on a plate

Add in the shallot and garlic, and cook for 3-4 minutes, until softens. Meanwhile, in a small bowl, whisk the coconut milk, oregano, lime juice, zest, and cornstarch, until well combined.

Pour the coconut milk mixture into the pan and lower the heat. Season with salt and pepper to taste.

Once simmering, return the salmon to the pan, and continue to cook until cooked through and the sauce has thickened.

Take it off the heat and sprinkle with fresh chopped cilantro and lime slices. Serve while hot and enjoy!

In the same pan saute onion until translucent, add garlic and cook until fragrant. Add the sliced mushrooms and cook until browned.

Dissolve the cornstarch in half and half. Pour the mixture into the pan and add Parmesan cheese. Bring to a gentle simmer and cook until the sauce thickens slightly.

Add the baby spinach  and allow it to cook down.

Season the sauce with salt, red chili flakes and add lemon juice. Finally give it a good stir and return the pan seared salmon.

Serve immediately with a side of steamed broccoli or roasted asparagus.

Made this today and it is sooooo good!! I carmelized the onions for longer than the recipe called for because I really wanted to get them soft and translucent and golden, and then I added in the carrots and garlic. I served it with baby gold potatoes tossed in butter and garlic and the leftover dill, along with a Caesar salad and it was a 10/10.

Very complimentary for salmon and trout. Great drizzled over vegetables as well. Many may not know however that a brown onion is the same as a yellow onion. Commonly, stores have yellow onion bins, but not brown onion bins. My point is most people are more inclined to try a new reciepe knowing the ingredients are easily accessible. No sense making it complicated. The reciepe is very good and 
worth a try.

Served this at a dinner party and the results were nothing short of FANTASTIC!  I may eat this sauce on shoe sole!
