Creamy Garlic Shrimp With Parmesan – Easy Keto Recipe

tbsp oil tomatoes

lb (700 grams) raw jumbo shrimp (peeled, deveined with tails on)

yellow onion (finely chopped)

garlic

oz (56 grams) oil-packed sun-dried tomatoes (drained and small chopped)

(120 milliliters) low-sodium fish or vegetable stock

(360 milliliters) heavy cream

tsp smoked paprika

tsp crushed chili flakes (or

(100 grams) fresh grated Parmesan

sea salt and ground black pepper (to taste)

(24 grams) packed fresh basil leaves

In a large non-stick skillet over medium heat, heat the oil from the sun-dried tomatoes.

Season the shrimp with salt and pepper, then sear them in 2 batches to avoid overcrowding the pan. Cook for 1-2 minutes on each side, until just pink. Remove from the pan and set aside.

In the same preheated skillet, add the onion, garlic, and sun-dried tomatoes.

Sauté for about 3-5 minutes, stirring frequently.

Add the stock and stir to remove all brown bits stuck on the bottom of the pan.

Bring to a gentle simmer until reduced by half.

Reduce the heat to a medium-low.

Add the cream, paprika, and crushed chili flakes to the skillet and stir until a creamy sauce forms.

Add the Parmesan, stirring until melted into the sauce. Taste and adjust the seasoning with salt and pepper.

Add the shrimp back to the skillet and reheat for 1-2 minutes.

Sprinkle with fresh basil and serve!

There is nothing ordinary about this Creamy Lemon Dill Shrimp. Fabulous and full of flavor, this shrimp is ah-mazing on its own or over your favorite rice or pasta. Switch up your same old, same old shrimp recipe for this one today! 

Creamy Lemon Dill Shrimp

shrimp

butter (divided)

chicken broth

heavy cream (OR half and half mixed with 1 tablespoon corn starch)

lemon juice

dill

black pepper

Rinse shrimp with cold water and pat very dry with paper towels. Melt 2 tablespoons of butter in a large skillet.

Add shrimp to pan and saute 4-6 minutes over medium-high heat until opaque. Transfer to a plate and cover to keep warm.

Add remaining 1 tablespoon butter to the pan. Once melted, stir in garlic for one minute until fragrant.

Whisk in chicken broth, then gradually whisk in heavy cream. One sauce is thickened and creamy, reduce heat to low and stir in lemon juice.

Return shrimp to the pan, toss to coat in the sauce. Stir in dill and garnish with cracked black pepper. Serve immediately.

Really delicious! Such a fantastic weeknight dinner that comes together quickly and makes a simple dinner feel like a special one.

Worked  out great!  I had fresh dill from the garden and shrimp in the freezer!  All the ingredients are pretty standard pantry items which makes it an even better recipe!  The only thing I changed was adding a quarter cup of grated parmesean after I added the heavy cream. We enjoyed it and will make it again!

I ended up with a thin sauce that needed a little help. I added 1/2 cup marscapone cheese, a little  salt and capers. It ended up delish!
