This creamy mushroom zucchini pasta is bursting with flavour while being super cosy at the same time. It combines the wonderful texture of mushrooms with the freshness of zucchini to create a delicious meat-free dinner that&#x27;s ready in under 30 minutes.

Creamy Mushroom Zucchini Pasta

250 g (9 oz) pasta

olive oil

tsp red chilli flakes

zucchini,

250 g (9 oz) closed cup mushrooms, diced into small pieces

ml (1/4 cup) dry sherry

200 ml (1 cup) double cream

g (ounce) Parmesan, grated

tbsp fresh parsley, minced

Bring a pot of pasta to a boil, salt it generously, and boil the pasta according to the instructions on the package. Reserve a cup of pasta water before draining.

Meanwhile, heat the olive oil in a large pan and fry the onion for 1-2 minutes until it softens. Add the garlic and red chilli flakes and continue to cook for 30 seconds.

Next, add the diced zucchini and mushrooms to the pan and cook on low to medium heat until they soften and become slightly golden (about 7-8 minutes).

Stir in the sherry and continue to cook...

Stir in the sherry and continue to cook until the alcohol evaporates. Add the double cream and  cook for 1 minute until the sauce thickens. Add a dash of pasta water and then add the drained pasta to the pan. Mix it everything well to combine, then stir in the grated Parmesan and parsley. Season to taste and serve immediately.

In a medium sized saucepan heat olive oil over medium heat

Add the zucchini and shallots and cook until softened, about 8-10 minutes

Once vegetables are very soft, add heavy cream, basil leaves, salt, pepper

Bring to a gentle simmer and allow to cook for 5 minutes, stir until all ingredients are incorporated

While the sauce is simmering, cook the pasta in salted water according to package instructions

When draining the pasta, be sure to reserve ½ cup of pasta water.Add pasta water to zucchini sauce

Remove sauce from heat and allow to cool slightly before transferring to a high speed blender

Transfer the sauce back to the sauce pan and add in Parmesan cheese along with pasta

Toss until pasta is coated, adding more pasta water if too thick, and serve topped with more parmesan and freshly ground pepper.

I added lemon zest and a bit of lemon juice to bring some needed acidity. I also used leeks for half the shallot amount and a bit of dill in addition to the basil.

Once again, one of your recipes turned out amazing! My entire family gobbled this up! It’s going into the rotation as we work our way through an abundance of zuchinni!

This was so simple and yummy! I subbed half the heavy cream for whole milk and added spicy Italian chicken sausage. The whole family loved it!

Made this for dinner was a big hit with the whole family even our picky toddler who I thought for sure would reject this enjoyed it immensely. It would be great if there was a plant based substitute for the dairy as someone who is lactose intolerant. I thought about using coconut but felt the sweetness would ruin the savory flavors. Anyhow will make again, I really like your recipes!

I read a question about subbing almond milk. That alters the taste in most of my recipes, but coconut cream does not and gives you the same richness heavy cream does without the dairy! Made this tonight and it was DELISH! Great way to use zucchini!!!

Delicious! Made this on a whim for lunch after seeing its reel on IG. Was very quick to prepare (even faster if you have an immersion blender) and easy to cut the recipe in half. Only change I made was a little lemon zest and squeeze of juice at the end to brighten it up a bit. Would be a great side to grilled or breaded chicken or pork cutlet.
