Cook bacon in an air fryer to achieve a crispy texture with less fat. The perfect bacon sandwich starts here

Lay the bacon in a single layer in the base of an air fryer – be sure the layers aren't overlapping. The size of the air fryer basket will determine how many rashers you can cook at one time.

Set the air fryer to 200C and cook streaky bacon rashers for 6-10 mins – just-cooked bacon will take 6 mins, but crispier bacon will take 9-10 mins. Cook back bacon rashers for 4-8 mins, depending on your preference. If you are cooking in batches, remember that the second batch will usually be quicker as the air fryer has heated up.

Remove the bacon using tongs and put on kitchen paper to drain before serving.

Cut turnips and carrots

Peel the turnips entirely. Cut all the turnips into bite sized pieces with a sharp knife, as regular potatoes typically do. At the same time, cut fresh carrots and place them all into a bowl ready for cooking.

Cut onions and pickles

Cut onion and all the pickles into small tiny squares and place them aside. At the same time, prepare your other ingredients. 

Prepare the salad dressing

In a big glass bowl, add yogurt with mayonnaise and approximately 1/3rd of a cup of liquid left from your pickle jar. Season with a pinch of salt and pepper and mix. 

Boil turnips with carrots

Place turnips and carrots into a cooking pot, add boiling water, bring to a boil and let it cook until tender for 15 minutes maximum. 

Strain and shock

Once your carrots and turnips are boiled, strain them through a strainer and pour a very cold pot of water to shock them, so they immediately stop the cooking process.

Add all into a big glass bowl

Add all remaining ingredients in a large mixing bowl, such as the onion, pickles, and green peas. Pour the whole dressing you have stored in the fridge. 

Mix together and season

Using two spatulas, gently mix the ingredients and salad dressing together. Refrigerate for at least 2 to 3 hours before you are ready to serve.

How to Cook Bacon

While some chowders are heavy and cream-laden, we opted for a much lighter soup that allowed the flavor of gently poached cod to shine through in a clean, thyme-scented broth. Just a little bit of bacon fat (rendered using the sauté function) infused the whole dish with richness and created a smoky base for our aromatics.

Instant Pot New England Fish Chowder

Using highest sauté function, cook bacon in the Instant Pot until browned and the fat is well rendered, 6 to 10 minutes. Using a slotted spoon, transfer bacon to a paper towel–lined plate.

Sauté

Add leeks, oil, and thyme to the fat left in the Instant Pot and cook, stirring occasionally, until leeks are softened and lightly browned, 7 to 10 minutes. Stir in water, scraping up any browned bits, then stir in potatoes, bay leaf, and salt.

Cook

Lock lid into place and close pressure-release valve. Select high pressure-cook function and cook for 3 minutes.

Release

Turn off Instant Pot and quick-release pressure. Carefully remove lid, allowing steam to escape away from you.

Whisk

In a medium bowl, whisk milk, cornstarch, and pepper together. Whisk milk mixture and corn into potato mixture in the Instant Pot and cook, using highest sauté function, until liquid is slightly thickened, about 1 minute. Turn off the Instant Pot.

Poach

Submerge cod in cooking liquid, partially cover the Instant Pot, and let sit until cod flakes apart when gently prodded with paring knife, 5 to 8 minutes. Discard bay leaf. Break up any remaining large pieces of cod.

Season

Season with salt and pepper to taste. Sprinkle individual portions with bacon and chives before serving.

This Loaded Potato Bowl recipe hits all the right notes for us. It's super simple, healthy, easy to adjust and there's something in it for everyone in the family to find interesting.

Scrub potatoes well under cold water and pierce all over with a fork. Bake the potatoes either in a 350°F oven for about 1 hour, or wrap in damp paper towels and microwave for about 5 minutes (both cooking methods may take a bit longer, depending on the size of the potatoes and the appliances). Once cooked, cut a small incision in the potatoes lengthwise to let steam escape. Cool for 5 minutes.

Meanwhile, bring a medium pot of water to a bowl and cook broccoli until tender, 3-4 minutes. Drain and cool at room temperature.

Add bacon to a large skillet (nonstick, cast iron or stainless steel) and cook the bacon over medium heat until crispy, about 6 minutes. Transfer to a paper towel-lined plate and cool for about 5 minutes. Roughly chop.

To assemble a loaded potato bowl, place a potato in a bowl and cut in half lengthwise. Add 1/2 tablespoon of the butter and mash the butter, along with 1/8 teaspoon (about 1 pinch) of the salt, until well combined and light and fluffy. Top with 1/4 cup of the cheese then sprinkle with bacon, broccoli and scallions and dollop with sour cream.
