Spicy-Sweet Baked Chicken Drumsticks Recipe

Preheat the oven to 450 degrees F. Line two rimmed baking sheets with foil, spray with non-stick cooking spray, and set aside.

Mix the flour, corn starch, and salt together in a bowl. Using paper towels, dry each drumstick and roll them in the flour mixture for a light dusting. Then lay them out on the baking sheets, evenly spaced.

Bake the drumsticks for 30 minutes, flipping once.

In the meantime, pour the pineapple juice and all remaining ingredients in a sauce pot. (If you are sensitive to heat, add 1/4 cup Sriracha; if you really like spicy food, add 1/2 cup.) Bring the sauce to a boil, reduce the heat and simmer for 30 minutes.

Then pour the sauce over the drumsticks evenly. Roll the drumsticks around in it to coat, and place back in the oven, uncovered.

Bake another 20 minutes, until the sauce is thick and sticky and the drumsticks are well coated. Serve warm.

Preheat the oven to 400 degrees. Line a large baking tray or half sheet pan with foil and place all the chicken pieces on it, skin side down. Sprinkle with salt and pepper and flip each piece skin side up. Drizzle about a teaspoon of oil over the skin on each piece of chicken and rub lightly to coat. Sprinkle again with salt and pepper.

In a resealable plastic bag, place chicken, 2 cups buttermilk, garlic, 3 teaspoons salt, black pepper, lemon zest, and thyme. Refrigerate 4 hours or overnight.

Preheat oven to 375. Line a rimmed sheet pan with aluminum foil; top with a wire rack. Spray with cooking spray. Remove chicken from marinade; discard marinade. Pat chicken dry; place on rack, and spray with cooking spray.

Bake for 30 minutes. Meanwhile, stir together melted butter, remaining 2 tablespoons buttermilk, honey, ½ teaspoon salt, and cayenne pepper. Remove chicken from oven. Brush tops of drumsticks with butter mixture. Turn drumsticks, brush with butter mixture. Return to oven; bake 15 minutes more.

To serve, squeeze lemon over drumsticks. Garnish with thyme, and serve with remaining butter mixture.

In a large baking dish, combine the sour cream and lemon juice, and season with salt and pepper. Place the chicken breast pieces in the dish and turn to coat thoroughly. Cover and refrigerate for at least 1 hour, or overnight.

Preheat oven to 425 degrees (convection preferred). Place a large wire rack over a large baking sheet lined with tin foil.

Pulse the fried onions in a food processor until coarse crumbs form. Alternatively, you can crush the onions in a large plastic zip-top bag.

Remove the chicken breasts from the sour cream mixture and coat the pieces thoroughly with the onions.

Arrange the coated chicken on the wire rack.

Bake in preheated oven, about 18-20 minutes, until golden brown and cooked through (center of thickest part should register 165-degrees on an instant read thermometer).

To prepare the cutlets, pound each chicken breast to an even 1/4 inch thickness.

Tonight I had no fresh herbs so I used smoked paprika in the mustard/ mayo mix and sprinkled some Italian seasoning and cayenne in the bread crumbs.
