Deliciously cheesy potatoes that are incredibly crispy on the outside, but soft and tender on the inside.

Crispy Parmesan Smashed Potatoes

Place potatoes in a large pot and add water to cover the potatoes.

Season water with salt and bring to a boil.

Reduce heat to medium-low and continue to cook until potatoes are tender, about 12 to 15 minutes.

Transfer potatoes to a colander; drain and wash with cold water.

Let cool 5 minutes.

Using the smooth side of a meat tenderizer, smash each potato to a 1/2-inch thickness.

Heat olive oil in the griddle pan.

Add thyme and continue to cook for 2 more minutes.

Working in batches, cook the smashed potatoes, turning once, until browned and crispy; about 3 minutes on each side. Add more olive oil if needed.

Transfer potatoes to a serving plate, season with salt and pepper, and immediately sprinkle with parmesan cheese; allow to melt.

Add chopped fresh parsley and serve.

These parmesan potatoes have a soft and creamy texture on the inside with a golden parmesan-crusted exterior which adds a satisfying crunch. You can&#039;t go wrong!

Parmesan Potatoes

Preheat oven to 400 F.

Spray a baking sheet with cooking spray.

Slice potatoes in half and place in a large bowl.

Combine parmesan cheese, paprika, onion powder, and garlic salt.

Pour olive oil over potatoes and toss to coat.

Sprinkle parmesan mixture over potatoes and toss to coat completely.

Place potatoes cut side down onto the prepared baking sheet.

Bake for 15 minutes. Flip potatoes over. Bake additional ten minutes.

Roasted Parmesan Potatoes

Ranch Dip (for serving)

Preheat the oven to 425˚F. Using a small sharp knife, score the potatoes. Place the butter in an 9 x 13-inch baking dish and set in the oven for 5 minutes, until the butter is melted.

Remove the dish from the oven, add parmesan cheese and spices until well combined and they form a paste. Spread with a spatula to coat the bottom of the pan with the paste.

Place the halved potatoes cut side down in the baking dish. Brush with the reserved melted butter on top. Bake until golden brown and crispy, about 35 minutes.

Separate the potatoes and serve with a ranch dip, if desired.

These garlicky roasted potatoes are tender and fluffy on the inside with a golden-brown, irresistible Parmesan crust.

Crispy Parmesan Crusted Potatoes

500 g (~1 lb) potatoes (small sized)

butter

tsp smoked paprika

Italian seasoning

sea salt

red pepper

Parmesan cheese (finely grated)

Preheat the oven to 220 °C (430 °F).

Wash and scrub the potatoes well. Don’t peel the skin. Then slice lengthwise and score each half.

In a small bowl, combine olive oil, butter, garlic powder, dried parsley, smoked paprika, Italian seasoning, sea salt and crushed red pepper.

Transfer the potatoes to a large bowl and pour the garlic butter marinade on top. Toss well till each potato is fully coated.

Take the baking tray and lay down a sheet of parchment paper. Sprinkle grated Parmesan generously.

Press the bottom side of each potato in the remaining Parmesan cheese and lay it down, skin side up, on the baking tray. Repeat for all the potatoes. Make sure you don’t overcrowd the baking pan. Brush with some leftover garlic butter.

Bake in the middle rack at 220 °C (430 °F) for 25-30 minutes. Baking time can vary depending on the size of the potatoes so do keep an eye. Cook till the potatoes are soft inside and the cheese has formed a crust.

Remove the tray from the oven and let rest for 4-5 mins. Then turn over all the potatoes, sprinkle with fresh parsley or chives, some more sea salt if you wish and enjoy!

Crispy Parmesan Potatoes

unsalted butter (melted, divided)

parmesan cheese (shredded)

serve with chopped parsley and a squeeze of lemon (optional)

Preheat your oven to 400 degrees.

Wash and dry your potatoes. Cut them in half, lengthwise, and score them on both sides to create your cuts. Don&#39;t cut too deep as we want the potato to stay intact.

In a bowl, add your scored potatoes and season with salt, pepper, 1 tablespoon melted butter, olive oil and seasonings of choice. At this point also add about 1 tablespoon shredded parmesan as well, toss to combine.

In an oven safe baking dish or baking pan, place your remaining 1 tablespoon melted butter and mix well with your remaining shredded parmesan to create a paste like consistency. Make sure it&#39;s laid evenly across the bottom of the dish.

Then, cut side down, add your potato mixture one by one in an even layer in the dish.

Bake and roast until the potatoes are tender and the cheese has not only melted, but has crisped up as well, about 45 minutes-1 hour.

Scrape off your potatoes and serve in a bowl with your dipping sauce of choice, we are using our creme fraiche ranch! Option to squeeze a little bit of lemon juice and a sprinkle of fresh parsley over it at the end as well!
