Crispy pork leg cooked using an air fryer.

Air Fryer Crispy Pata

pork hock (pata)

bay leaves

star anise

onion (wedged)

garlic (crushed)

white vinegar

whole peppercorn

cooking oil

Salt and black pepper

Combine pork hock, garlic, bay leaves, star anise, whole peppercorn, onion, and salt in a wide cooking pot. Add water until the pork hocks are fully submerged. Cover and let it boil. Adjust heat to low and continue boiling for 60 to 90 minutes or until the pork gets tender.

Remove pork hock from the pot. Let it cool down. Rub vinegar all over followed by salt and ground black pepper. Let it air dry for at least 6 hours (note: you may also soak it under the sun or dehydrate in the air fryer for 3 hours).

Rub cooking oil all over the pork hock. Place it in an air fryer and air-fry at 450F for 15 minutes. Adjust the temperature to 350F and continue air frying for 10 minutes.

Remove from the air fryer and arrange in a serving plate. Serve with spicy vinegar dipping sauce.

This Air Fryer Crispy Pata is better than take out! It is crispy, tender and juicy. The secret for this recipe is using SPRITE, yes that is right! This Pata (Pork Hock) is boiled with sprite, star anise, bay leaves, peppercorns, 5 spice powder, garlic , salt and pepper before air frying them. All the aromatic will penetrates the Crispy Pata and that makes it so special!

pork hock

500 ml sprite

500 ml water (add more if needed)

tbsp whole peppercorn

tsp 5 spice powder

tbsp oil

salt and pepper (to taste)

soy sauce

vinegar

onion (chopped)

salt and pepper

In a large pot, combine pork hock, bay leaves, peppercorns, star anise, garlic and add 5 spice powder. Pour sprite and water. Season with salt and pepper.

Bring it to boil for 90 minutes until pork hock is tender.

Remove pork hock from the pot. Let cool down and pat dry using paper towel or kitchen towel.

Rub with vinegar, garlic, salt and pepper. Let it dry for 5-6 hours or overnight. Or dehydrate using air fryer for 1-2 hours.

Rub pork hock with oil. Place it in the air fryer and air fry for 375F for 15 minutes. Adjust temperature for 350F and cook for another 15 minutes. 

In a small bowl, combine soy sauce, vinegar, onion and red pepper. Season with sauce and pepper.
