Salmon Piccata

(6 oz) salmon filets

all-purpose flour

tsp kosher salt

¼ tsp freshly cracked black pepper

Tbsp extra virgin olive oil

dry white wine (such as Pinto Blanc or Pinot Gris)

chicken stock or vegetable stock (low-sodium)

garlic (smashed)

capers

unsalted butter

lemon juiced (about 3 Tbsp)

Tbsp parsley (chopped)

Dry salmon by patting gently on all sides with a paper towel. Combine all-purpose flour, kosher salt, and black pepper in a shallow bowl. Season salmon filets on all sides with flour, shaking off any excess.

Heat oil and 1 Tbsp butter in a large skillet over medium-high heat. When hot, add salmon, flesh side down, and cook for 3 minutes undisturbed. Carefully turn salmon over so it is now skin side down, then cook an additional 2-3 minutes for medium-rare. Transfer salmon to a plate while you make the sauce.

Add smashed garlic cloves to the pan, then cook until fragrant and browned, about 30 seconds. Add white wine and capers, bring to a boil, and cook for about 1-2 minutes to reduce.

Pour in stock (or water), turn heat down to medium, then add butter. Swirl until butter has completely melted. Remove pan from the heat, add lemon juice and parsley, then stir one final time. Taste and adjust seasoning as necessary.

Return cooked salmon filets to piccata sauce, garnish with additional parsley, lemon wedges, and a sprinkle of flaky sea salt. Serve immediately with extra sauce spooned on top.

Crispy Pan Seared Salmon with Lemon Parmesan Sauce

Tbsp grapeseed or extra virgin olive oil

coconut milk (full fat

mascarpone cheese (room temperature )

parmesan cheese (grated )

lemons

chives (chopped, plus more for serving )

dill (chopped, plus more for serving )

zucchini

Tbsp extra virgin olive oil (divided )

½ tsp kosher salt

Israeli couscous

Tbsp pine nuts (toasted )

Dry salmon before cooking. Place salmon filets on a paper-towel lined plate to dry. Let sit 5-10 minutes, then turn over and dry an additional 5-10 minutes. Season salmon on both sides with salt and pepper.  

Cook the zucchini. Preheat oven to 375 F. Place zucchini on a rimmed baking sheet, then drizzle with 2 Tbsp extra virgin olive oil and season with salt and pepper. Toss to combine, then roast until tender, about 15-20 minutes, stirring once halfway through.  

Make the couscous. Place 1 ¼ cups water in a sauce pan then bring to a boil. Add couscous, turn heat to a simmer, then cover and set aside until all water has absorbed, about 5 minutes. Fluff couscous with a fork, drizzle in remaining 2 Tbsp extra virgin olive oil, roasted zucchini, and pine nuts. Gently toss to combine.

Cook the salmon. Heat oil in a large nonstick skillet over medium-high heat. When hot, add salmon skin side down. Cook until skin is crisp and salmon easily pulls away from the pan, about 4-5 minutes. Carefully flip and cook other side until salmon registers between 110 and 120 F for medium rare, about 3 minutes more. Cook longer as desired, but remember the fish will continue to cook a little after you remove it from the pan. 

Make the sauce. Remove salmon from pan and set aside. Meanwhile, to the same pan add shallots and cook until translucent, about 3 minutes. Add garlic and red pepper flakes, then cook 30 seconds more. Pour in coconut milk or heavy cream and mascarpone cheese, then stir until cheese has completely melted. Add parmesan, juice from 1-2 lemons (start with 2-3 Tbsp, then add more if you love lemon OR just place lemon halves into sauce!), and fresh herbs, then whisk to combine. Taste sauce and adjust seasoning as needed. Remove from the heat, then either return salmon to the pan or serve on the side with sauce spooned on top.

Serve immediately with couscous, arugula, and crusty bread.

Sheet Pan Salmon and Vegetables

carrots (chopped)

zucchini squash (chopped)

½ red onion (sliced)

broccolini (chopped*)

red bell pepper (chopped)

¼ tsp sea salt (divided)

Preheat the oven to 400 degrees Fahrenheit.

Chop all of the vegetables and spread them over a large rimmed baking sheet in a single layer.

Drizzle the vegetables with 2 tablespoons of avocado oil (or more if it seems like they need it) and sprinkle with 3/4 teaspoon of sea salt. Note: You want the vegetables to have a nice coat of oil to protect them from burning during the baking process, but there shouldn’t be so much oil that they are soggy.

Roast the vegetables on the center rack of the preheated oven for 15 minutes.

While the vegetables are roasting, coat the salmon filets with avocado oil, then sprinkle with sea salt, garlic powder, and paprika.

Remove the vegetables from the oven and give them a thorough stir (I use a metal spatula for this).

Make room on the sheet pan for the salmon (simply scoot the vegetables away from the center). Place salmon filets on the baking sheet then bake for another 10 to 15 minutes, or until the salmon is cooked through. For crispy salmon skin, place the oven on the high broil setting for 3 to 5 minutes at the end. 

Salmon is considered fully cooked when it reaches an internal temperature of 145 degrees Fahrenheit. You can also tell salmon is cooked through when the center is completely opaque and light pink. Do note that the exact cooking time will vary depending on the thickness of the fish, so for the best result, use a meat thermometer to test the internal temperature.

Serve salmon and vegetables with fresh lemon slices and enjoy!
