A deliciously easy, Mexican-inspired slow cooker recipe for pork loin smothered in a bold and flavorful chile verde sauce.

Slow Cooker Pork Chile Verde

vegetable oil

carrots,

yellow onion, (diced)

garlic, (minced)

green enchilada sauce

salsa verde

4-oz can chopped green chiles

salt, (or to taste)

black pepper, (to taste)

rice

Flour Tortillas, (warmed)

Jalapenos, (seeded and thinly sliced, for garnish)

Chopped fresh cilantro, (for garnish)

Sour cream, (for garnish)

Lime wedges

Heat oil in a large skillet.

To the hot oil, add pork, carrots, onions, and garlic; saute until pork is browned on all sides.

Remove skillet from heat and transfer pork mixture to a 6-quart, or larger, slow cooker.

Stir in the enchilada sauce, salsa verde, green chiles, salt, and pepper; cover the slow cooker and cook on LOW for 6 hours, or until meat is tender and internal temperature registers at 145˚F. Using an instant read thermometer, start checking for doneness around the 4-hour mark.

Remove cover, stir, taste for salt and pepper, and adjust.

Let stand 8 to 10 minutes.

Garnish with jalapenos and cilantro.

Serve over prepared rice or tortillas with sour cream and lime wedges.

Pulled pork is perfect for the slow cooker. Cooking the pork low and very slow is the secret to the juiciest and most tender pulled pork. Serve the pork as is or feel free to stir in your favorite barbecue or other sauces at the end of cooking.

Great recipe.  I seared the pork, added about a cup of cab franc that was a few days old, and added half again as much garlic and worchestershire sauce.  It was super good.

Followed the recipe exactly (scaled down) and it was so perfect. I like pulled pork okay, but I LOVED this - wish I'd made four times a much! So tender and moist and it actually had flavor, but not an overwhelming one. Did not need any BBQ sauce, nor salt, nor pepper. Ate it without bread (because, carbs) and some pickles on the side. Love, love, love. Making it again the instant the Thanksgiving turkey leftovers are gone (like next week).

Crock Pot Pork Roast and White Beans

Soak beans overnight or according to package directions.  Next morning, add roast and beans to crockpot, along with chopped onion, garlic and pepper. (I don’t salt my beans until they are done).

Add enough water to cover beans and leave a little space at the top or crockpot will run over when it starts to boil.  Cook on high for 4 to 5 hours or low 7 to 8 hours until done.  Serve with cornbread.

This is an easy slow-cooked recipe combining pork tenderloin and Amish egg noodles in a delectable easy gravy that you prepare right in the slow cooker.

Slow Cooker Pork and Noodles

all purpose flour

french onion soup (10.5 ounce)

Worcestershire sauce

garlic powder

onion powder

cornstarch

egg noodles uncooked

Heat vegetable oil in a skillet over medium heat. Roll the pork tenderloin in the flour and cook in the skillet until browned on all sides.

Place the browned pork tenderloin in the bottom of the slow cooker. Add soup, Worcestershire sauce, garlic powder, and onion powder. Cover and cook on low for 4 hours or until tender. Turn the slow cooker to high in the last 30 minutes of cooking.

Stir 2 tablespoons of water and cornstarch to create a smooth paste. Remove pork from the slow cooker and plate. Whisk cornstarch mixture into slow cooker. Cover and let cook and thicken for 10 minutes. Shred pork and return pork to slow cooker.

Add egg noodles and 3/4 cup water to the slow cooker making sure the noodles are pushed down into the liquid. Cook until noodles are tender; approximately 30 minutes. Do not overcook.

Salt and pepper to taste. Top with fresh chopped parsley and serve.

Tried to give it 5 stars, but it wouldn't let me...  Used the gravy recipe with leftover pulled pork and it was delicious!!  So easy and a new way to use up leftovers.  My husband nearly ate the whole pot.
