Healthy Buffalo Chicken Bowls

corn

black beans

avocados

cherry tomatoes (halved)

chicken breasts

TBS garlic (minced)

TBS your favorite ranch dressing

Cook chicken, garlic and hot sauce to slow cooker and cook on low for 6 hours or on high for 3 hours. When chicken is cooked through, shred it and set aside.

Next, drain and rinse your corn and black beans and add them to a bowl. Rinse and half your cherry tomatoes and add them to the bowl as well. Lastly, dice your avocados and add them to the mix!

Assemble your bowls by adding your veggie mixture, topping with chicken, and finishing them off with some healthy yogurt based ranch dressing (or whatever your favorite ranch dressing is).

This crockpot buffalo chicken is made in the crockpot and becomes so tender and flavorful as it cooks. It&#x27;s perfect on sandwiches or sliders! 

Crockpot Buffalo Chicken Sandwiches

½ pounds boneless skinless chicken thighs ((excess fat trimmed off))

½ pounds boneless skinless chicken breasts

yellow onion, diced small ((about 1 cup))

red bell pepper, seeded and diced small ((about 1 cup))

(14.5 ounces) tomato sauce

hot-pepper sauce,

Worcestershire sauce

yellow mustard

dark brown sugar

garlic powder

cornstarch

Salt and pepper,

Hamburger buns or slider buns

Blue cheese,

Place chicken, chopped onions and red pepper into slow cooker. 

In a medium bowl, mix tomato sauce, hot-pepper sauce, Worcestershire, mustard, brown sugar, and garlic powder.

Pour over chicken and stir well to combine. Cover and cook on HIGH 3-4 hours, or on LOW 5-6 hours, or until chicken is very tender.

Remove chicken from slow cooker; place on platter or flat bowl; cool slightly. Turn slow cooker to HIGH.

Remove ½ cup of the sauce; let cool. 

Shred chicken with two forks and return meat to slow cooker. 

When reserved sauce has cooled to room temperature, whisk in cornstarch until no lumps remain. Add to slow cooker and stir well. Cook on high for about 10 minutes or until mixture has thickened slightly. Taste, add salt and pepper, if needed.

Serve with buns, additional hot pepper sauce, and crumbled blue cheese.

Crockpot Buffalo Shredded Chicken

- 2 pounds boneless skinless chicken breasts (about 3 -4 medium chicken breasts)

Frank's Hot Sauce

Into the crockpot, add the chicken breasts, and sprinkle the ranch seasoning over the top. If you make homemade seasoning then use 3 tablespoons of seasoning.

Pour the hot sauce and chicken broth over the chicken breasts.

Using a fork, turn the chicken over a few times, mixing the liquid and seasonings.

Tightly place the lid on, and then set the slow cooker to cook on low for 5-6 hours. The internal temperature of the chicken should reach 165 degrees.

Remove the chicken from the slow cooker and place it into a large glass mixing bowl.

Using a hand mixer or two forks, shred the chicken. 

Add in 2 tablespoons of butter and ½ - 1 cup of liquid from the slow cooker. Stir until butter melts and the chicken is coated with the sauce.

Use in your favorite buffalo chicken recipes.
