Crockpot Corn Chowder is the perfect soup for keeping you warm, filling your up, and tasting delicious.  Full of corn, potatoes, and vegetables and topped with crispy bacon each bite gets better and better.

Crockpot Corn Chowder

vegetable oil

carrots

celery

onion

potatoes

chicken stock

tsp garlic salt

thyme

paprika

bay leaf

tsp black pepper

corn

milk

cornstarch

water

bacon

chives

In a skillet over medium-high heat add canola oil and sauté carrots, celery, and onions until tender, about 5 minutes.  Transfer to 6qt crockpot and add potatoes, chicken stock, garlic salt, thyme, paprika, bay leaf, and pepper.  Cover and cook on low 3 hours (high for 1.5 hours).

Stir in corn, milk and (make a roux with cornstarch and water) cornstarch mixture.  Stir and cook one more hour.

Using a potato masher, mash potatoes and vegetables to thicken soup (you can mash as much or as little as desired).   Top with crumbled bacon and chopped chives.

½ pound bacon, cooked until crispy and crumbled

½ pounds Russet potatoes

medium/large sweet yellow onion (finely chopped)

garlic

salt

2 cups half and half or heavy cream

salt and pepper (to taste)

Combine all ingredients EXCEPT half &amp; half in the slow cooker.

(SLOW COOKER) Cook on low for 8 - 10 hours or high for 4 - 6 hours.

(INSTANT POT) Cook on manual (high pressure) 10 minutes then do a 10 minute natural pressure release.

Blend about half the soup using an immersion blender (or just scoop it into your upright blender then return to slow cooker).

Add half and half or heavy cream and continue cooking, uncovered, for about another 15 minutes, until heated through. Salt and pepper to taste.
