This Instant Pot Chicken Ramen makes a delicious and flavorful ramen in about half an hour in your electric pressure cooker!

Instant Pot Easy Chicken Ramen

sesame oil

shiitake mushrooms (stems removed and sliced)

baby bok choy

boneless (skinless chicken thighs)

chicken broth

yakisoba noodles*

Bring a pot of water to a boil. When boiling, add the noodles and simmer for 3 minutes. Strain and rinse with cold water. Toss with just a little oil if necessary to keep them from sticking (mine already had a little oil on them, so I didn&#x27;t need to). Set aside.

(If using another type of noodle, follow package instructions)

If Using Fresh Noodles:

Add all ingredients except for noodles and bok choy to instant pot. Set to manual, high pressure for 8 minutes.  It will take about 10 minutes to come to pressure.  After cooking, use the quick release to release pressure.  Open pot and stir in bok choy. Allow bok choy to cook in the hot soup for 2-3 minutes.

Meanwhile, remove the chicken and shred it with two forks. Add it back to the broth and serve.

To Prepare Soup:

In a bowl, place a serving of noodles, then pour the soup over them. Top soup with ramen egg, sliced green onions, cilantro and sesame seeds if desired.

To Serve The Ramen:

This is the easiest slow cooker pulled pork, but it tastes unbelievable!  Make a huge batch and freeze some of it to put on sandwiches or pizza, in soup, tacos, fried rice and more!

The Easiest Slow Cooker Pulled Pork

pork shoulder roast (Boston Butt, around 4 pounds)

kosher salt

Season the roast all over with kosher salt. Place in slow cooker and set to low. Cook for about nine hours.

When cooked remove from slow cooker and allow to cool slightly. If desired, remove any large pieces of fat - they should be very easy to remove at this point. Using two forks, shred the meat.

This all purpose Slow Cooker Mexican Shredded Beef is great for tacos, burritos and more!  Quick and easy prep work and the crock pot does the rest.

Slow Cooker Mexican Shredded Beef

beef chuck roast

onion (diced)

garlic

tomato paste

lime

Tablespoon chili powder

cumin

paprika

oregano

kosher salt (plus more to taste)

red chili flakes

Mix together the chili powder, cumin, paprika, salt, oregano and red chili flakes, set aside.

Add the chopped onion and garlic to the slow cooker with the tomato paste, lime juice, and just 1-2 teaspoons of the spice mixture.  Stir everything together until fully mixed.

Sprinkle the rest of the spices all over the chuck roast, patting to help it stick to the meat.

Place the meat on top of the onion mixture and set cook on low for 7-8 hours. Total cooking time will vary for different roasts. 

After meat has cooked, use two forks to shred the meat, removing any large pieces of fat or gristle as you find them.   (If the meat is still too tough to shred, it needs to be cooked a little longer.  Cook for an additional 30-60 minutes and check it again.)  Stir to mix well with the sauce.  Cover and continue to cook on low for another 30-60 minutes. 

Before serving stir well again to mix the meat with the sauce.  Taste meat and season with more salt to taste.

This delicious Slow Cooker Pork Carnitas recipe is tender and juicy, yet simple to make.  Mexican pulled pork is great to have on hand for carnitas tacos, burrito bowls, salads, sandwiches and more.

Optional Step: To create crispy carnitas, heat a heavy skillet (cast iron is best) over medium high heat.&nbsp; When pan is hot, add 1 tablespoon of oil.&nbsp; Add the carnitas in batches, careful not to crowd the pan.&nbsp; Drizzle a few tablespoons of the cooking liquid from the crock pot over the meat as it fries.&nbsp; Once bottom is crispy, turn the meat, until desired crispiness is reached.

Whisk together the ¼ cup of soy sauce, ¼ cup of rice vinegar and ¾ cup water, set aside.

Prepare an ice bath by filling a bowl with ice and water.

Add one cup of water to your instant pot/electric pressure cooker.  Put the steamer rack in the bottom of the pot, and place the eggs on top of the rack.  Set to manual, high pressure for 3-5 minutes.  Be sure your vent is set to sealing.  After cooking, use the quick pressure release right away.  If you allow them to sit in the heat they will continue to cook and will be over done.  Place in the ice bath for 3-5 minutes. Remove from ice bath and gently peel (egg will be soft).  To peel gently tap the bottom of the egg to get it started.  Sometimes peeling under water makes it easier.  However, the freshness of the egg will make a difference in how easy or difficult it is to peel them.

Place peeled eggs in the marinade and make sure they are completely covered with the marinade. Leave in the marinade for several hours or overnight. If keeping longer, discard the marinade and store in the refrigerator up to 3 days. Reheat the egg in the ramen broth (don't leave in the broth very long before serving or the egg will overcook).
