Asian Cucumber Salad

Persian

peanuts (chopped)

rice vinegar

sesame oil

soy sauce

garlic

sugar

red pepper flakes (for serving)

Slice the cucumbers into 1/4-inch pieces, transfer to a bowl.

Add the peanuts.

In a small bowl, whisk together the vinegar, sesame oil, soy sauce, garlic, and sugar.

Add the dressing to the cucumbers and peanuts and toss to combine. Top with crushed red pepper flakes to taste and serve.

mini cucumbers

tsp salt (to drain water)

soy sauce (not light or dark soy sauce!)

Chinese black vinegar (*can be omitted if you prefer not spicy)

tbsp sesame seeds

tbsp white granulated sugar

garlic (minced)

tbsp Chinese Chili oil (store bought

Slice the ends off the mini cucumbers.

With the side of the knife, smash cucumbers a few times until they’re a bit flattened and broken down the centre.

On an angle, slice cucumbers into long diagonal strips.

Transfer to a bowl. Add salt and massage. Allow cucumbers to sit in salt for 5 minutes (or ideally 10 minutes) to draw out excess liquids. Discard liquid.

Rinse cucumbers under cold water to remove excess salt, to prevent it from competing with sauce.

Strain the rinsed cucumbers.

Season with sauce ingredients and mix well. Enjoy!

Spicy Asian Cucumber Salad

Mini cucumbers (or Persian cucumbers)

tbsp Regular soy sauce (not light or dark!)

Garlic (minced)

tbsp Rice vinegar (or white vinegar)

tbsp Chinese chili oil

Sesame oil

Sesame seeds

tbsp green onion (finely sliced)

Wash cucumbers and cut off the ends.

Place one cucumber between two chopsticks that you don’t mind nicking up (like takeout chopsticks). Make thin diagonal slices on the top. Then flip the cucumber over and do the same on the other side. Then cut cucumber into halves. Repeat for remaining cucumbers. Transfer to a large bowl. *Refer to video below for better visuals. Note: Do not cut them in on a straight angle or the spiral will not work.

Sprinkle salt over cucumbers and gently massage into them. Let cucumbers soak in salt for 5 minutes (no more than 10 minutes or they will break down). Rinse with cold water at least 3-4 times to completely remove the salt. Strain and set aside.

Combine sauce ingredients in a separate bowl.

Pour sauce over cucumbers and gently mix. Enjoy!
