Ginger-Crusted Salmon with Melon Salsa

A family favorite, this recipe is as easy as it is delicious! Savory chicken is baked topped with a smokey flavorful panko coating until it is tender and juicy on the inside and perfectly crisp and flavor filled on the outside.

Baked Panko Crusted Chicken with Honey Drizzle

lbs chicken breast cutlets ((about 6 thin chicken breast pieces))

salt and pepper (to taste)

mayonnaise

panko bread crumbs (unseasoned)

butter

tsp smoked paprika

garlic powder

tsp salt

onion powder

tbsp honey

tsp red pepper flakes ((optional))

Prepare the panko mixture by combining the panko with the paprika, garlic powder, salt, and onion powder. Pour the butter over the seasoned crumbs and mix until combined. Set aside.

Season each side of the chicken with salt and pepper to taste. Then lay them flat on a large baking sheet and spread a very thin coat of mayonnaise over the top of each chicken breast.

Turn each chicken breast mayo side down into the crumb mixture to coat the top, then return it to the baking sheet. Spoon any remaining crumbs over the top of each chicken breast and pat to secure to the chicken.

Bake at 425˚F for 10-15 minutes, until cooked through to an internal temp of 165˚F. The time w vary based on the thickness of your chicken.

While the chicken cooks mix the honey with the red pepper flakes. Drizzle the honey over the chicken right before serving. Enjoy!

Coconut Crusted Tofu with Chilli Lime Sauce

300 g firm silken tofu,

cornflour

coconut milk

Sichuan peppercorns, crushed

Spread flour and coconut over two separate plates and pour coconut milk into a bowl.

Coat tofu in flour, dip in coconut milk and then coat in desiccated coconut. 

Heat oil in a large frying pan over medium heat. Fry tofu on each side until golden. 

To make the dipping sauce, mix all ingredients together in a small bowl. 

Serve tofu on a platter with dressing on the side.

Easy Parmesan-Crusted Chicken Tenders

Preheat oven to 350 degrees F. Line large rimmed sheet pan with aluminum foil, place a cooling rack in the pan.

Parmesan Crusted Baked Walleye

lb walleye ((2 fillets))

Preheat the oven to 400 degrees. Line a baking tray with foil and spray with non-stick cooking oil or butter. If your fish is frozen, thaw it completely.

Crack an egg onto a shallow bowl and whisk it. Then, grate parmesan cheese into a separate bowl with remaining dry ingredients and stir.

Cut the skin off your walleye fillet&#39;s if needed. Then, pat the fillets with a paper towel on both sides so that they&#39;re dry.

Dip one fillet into the egg to completely coat it with egg. Then, dip it into the bowl with the dry ingredients to coat it with the dry ingredients. Next, place the fillet on the baking sheet. Repeat with other fillet. Then, sprinkle any remaining dry ingredients on top of the fish.

Bake in oven for 15 minutes. The fish should be white and flakey on the inside and golden brown on the outside when it&#39;s done. Remove from oven, top with lemon juice, and enjoy!

The key to this recipe, like every other, is to get the best ingredients...fresh walleye, top-drawer parm and so forth.

This recipe does your best ingredients proud. I made it exactly according to the published measurements with only one digression: 1 T of heavy cream in the egg. Otherwise, exactly as presented.

The fish was flaky and moist, with the lovely flavor of baked parm and the spices (onion, garlic, salt, ground pepper). A salutary squeeze of lemon finished it all up. 

Walleye is a king of Midwestern lake fish and this recipe definitely honors his majesty.

I found some fresh Canadian walleye at Costco.  Although I love fried walleye, it is not very healthy.  I made this recipe and it was delicious.  Can't wait for the leftovers.

This recipe is delicious! We are watching our carbs so I used Porq Italian Herb Panko Crumbs instead of regular Panko. I also broiled the fish for a few minutes at the end of the cooking time to brown-up the crumbs. Served it with a side of garden green beans. This will be our go-to recipe for walleye in the future!
