Crustless Quiche with Spinach

frozen spinach*

oregano

Preheat oven to 375°F. Grease a 9” round pie dish.

Place the spinach in a colander and let warm water run over it until it is thawed, about 1 minute (some brands take a bit more effort to defrost: you can also use a microwave if necessary). Then use your hands to squeeze out as much excess liquid as you can.

In a large bowl, whisk the eggs. Then stir in the oregano, salt, garlic powder, cottage cheese, grated Parmesan cheese, spinach, and roasted red pepper. Add a few grinds of fresh ground black pepper if you like.

Pour the egg mixture into the prepared pie dish. Sprinkle the top with a few tablespoons of additional chopped roasted red pepper.

Bake the quiche for 25 to 30 minutes, until set in the center and golden around the edges. Allow to rest for at least 15 minutes before serving. (Storage info: This saves well! Store refrigerated for up to 5 days: you can eat it cold, room temp, or re-warm it. Try it in a sandwich!)

This was delicious and so easy to make. It was perfect for a weeknight dinner. I will definitely be making this again.

We did this for Christmas morning.  It worked great!  But I did have to bake it 38 minutes.

Crustless Spinach Quiche Recipe

olive oil

onion

Preheat oven to 350 degrees F.

Spray 9" pie pan with cooking spray.

In a large skillet over medium heat, add olive oil. When the oil is hot, add the onions, red and green bell peppers. Cook until the vegetables are soft.

Add spinach. It will look like a LOT. Don't worry, it cooks down in about 2 minutes.

Add minced garlic and stir for about 1 minute.

In a large bowl, whisk together the eggs and milk. Add salt and pepper to taste.

Add in the Greek Seasoning.

Stir in Cheddar cheese and crumbled feta.

Add in the spinach and other vegetables in the egg mixture. Stir until combined.

Pour the egg mixture into a prepared 9" pie pan.

Bake in a preheated oven for about 30 minutes.

Let rest for about 10 minutes.

This delicious Crustless Spinach Quiche with ricotta uses thinly sliced sweet potatoes instead of puff pastry as a base.

Crustless Spinach Quiche

oz baby spinach

Preheat oven to 350F.

Peel and thinly slice sweet potatoes (preferably with a mandoline). Cut off the end of a handful of slices to get a flat edge. Add slices to a bowl, drizzle with avocado oil and work oil into the slices with your hands.

Line a 9&quot; pie dish with the sweet potato slices. The round slices for the bottom and the slices with the flat edge for the sides. Ensure they all overlap. Then prebake for 15 minutes. Set a timer!

In the meantime, finely chop shallots and galric and then brown them in a large pan over medium low heat in a little avocado oil. Once brown, add spinach and sauté for about 30 seconds or until wilted. Remove from the heat and let cool completely.

Add eggs, half of the grated Parmesan, milk, and sea salt and pepper to taste to a large bowl and whisk until well combined. Then add cooled spinach mixture and use a spatula to mix in. Do NOT add hot spinach, it has to be cold enough to not start cooking the eggs.

In a separate bowl mix ricotta, cheddar cheese and remaining grated Parmesan.

Carefully pour egg filling into prebaked sweet potato crust and then add dollops of the ricotta mixture in an uneven pattern all over.

Bake the quiche for 40-45 minutes or until the eggs are set.

Turn on the broiler the last minute or two for a nice brown top. Garnish with basil if desired.

Heat oven to 375 degrees F (190 degrees C).

Heat a medium-sized skillet on medium-high heat. &nbsp;Add the olive oil and swirl to evenly coat pan.

Add the chopped onions and minced garlic to the pan; cook stirring occasionally until onions are translucent, about 5 minutes.

Add the cubed ham to the pan and cook, stirring occasionally for 1 minute. Add the spinach and stir until spinach is beginning to wilt, about 3 minutes.

Remove pan from the heat and set aside. &nbsp;

In a medium-sized mixing bowl, whisk together the eggs, cream, salt and pepper. Fold in the spinach and ham mixture.

Stir in the cheese and pour into lightly greased 5-inch baking dish or dish of a similar size.

brown onion (*about 1 small onion)

tbsp crushed garlic (*about 2 cloves)

oz feta block (*crumbled, about 1 1/3 cups)

In a large frying pan sauté onions in oil until soft over med/high heat, about 3-4 mins. Add in garlic and continue sautéing for an additional min or until garlic become fragrant. Working in batches add 3-4 handfuls of spinach at a time and cook until wilted. Take off heat. Place a fine mesh colander over a large bowl. Add spinach to colander and using the back of a spoon press against spinach to remove excess moisture. Spinach will release approximately 3/4 cup of moisture.

Preheat oven to 350℉ and grease a 9 1/2 inch pie pan.

Crack eggs into a large mixing bowl and beat. Whisk into egg mixture half and half, dill, salt and pepper. Stir in feta crumbles and spinach mixture. Pour into prepared pie pan and bake for 50-65 mins or until center of quiche is no longer jiggly and an inserted knife comes out clean.

Serve either warm or chilled.

My husband and I really loved the flavor. It was a perfect make ahead Sunday breakfast.
