You can make cucumber juice with just cucumbers and water and no special juicer. I share the easy steps to make the recipe and its amazing health benefits!

Cucumber Juice

Slice off the ends of the cucumbers and peel. Chop into a few larger pieces.

Place the cucumbers, water, lemon zest, lemon juice and mint in a food processor or in a blender. Blend the ingredients for 2-3 minutes until smooth.

Set a strainer over a larger bowl and pour the cucumber juice into the strainer. Use a spatula to move the juice through the strainer until no more juice strains out. Discard the solids.

Enjoy the cucumber juice immediately, or store in fridge for up to 24 hours.

This bubbly, refreshing summertime cucumber mocktail has all the flavors of lime and mint.  Plus it&#039;s the perfect way to stay cool on a hot day. Serve this cucumber drink as an everyday drink or for a special event.  Easy to prep it ahead and make it by the glass!

Sparkling Lime Cucumber Drink Recipe

simple syrup (or other sweetener)

sparkling water

Place cucumber, lime juice, mint leaves and agave in a blender and process until well juiced.

Strain the liquid, pressing the juice from the solids and reserve the liquid.

Place ¼ cup cucumber liquid into glass, add ice cubes and top off with sparkling water.  Garnish with mint leaf.

Refreshing Cucumber Mint Vodka Cocktail is sweetened with mint simple syrup. Easy to make and  so refreshing

Cucumber Mint Cocktail

Tbsp Cucumber, finely diced

Tbsp Mint Simple Syrup (recipe above)

Lime juice,

oz Vodka

oz Sparkling water

Mint sprigs,

Cucumber,

In a small heavy-bottom saucepan add sugar and water. Bring to a low boil, and cook until sugar dissolves.

Turn off heat, stir in mint leaves, and cover the pan. Allow mixture to steep for at least 15 minutes. Strain into a glass jar and cool.

This recipe makes 1 cup of syrup so there will be leftover. The Syrup can be kept sealed in refrigerator for 1-month.

Mint Simple Syrup

Finely dice 2 Tbsp cucumber. Cut 2 extra round or long slices for garnish.

Add diced cucumber, 2 tablespoons cooled simple syrup and lime juice to a cocktail shaker. Muddle (smash) the cucumber for about 1-minute with a muddler or the back of a wooden spoon.

Add vodka and crushed ice to the shaker. Shake vigorously for about 30-seconds.

Remove the lid of the shaker and pour evenly into two cocktail glasses, including ice and cucumber pieces. (Strain if you don&#039;t want the cucumber pieces in the glasses).

Top each glass to the top with sparkling water.

Garnish with cucumber slices or rounds and a mint sprig.
