A classic old-world recipe for creamy cucumber radish salad. The ingredients are so simple but it really doesn't need anything else! One of our favorite radish recipes.&nbsp;

Creamy Cucumber Radish Salad Recipe

English cucumber (thinly sliced)

radishes ((2 bunches), trimmed and thinly sliced)

chives onion

sour cream (*)

tsp sea salt (or add to taste)

In a medium salad bowl, combine sliced cucumbers, sliced radishes and chopped green onion.

Just before serving, add 3/4 cup sour cream and 3/4 tsp salt or add salt to taste. Stir to coat the salad in dressing.&nbsp;

This is a healthy combination of refreshing cucumbers, crunchy radishes and creamy cottage cheese. This is a MUST TRY salad recipe this summer!

Creamy Cucumber-Radish Salad

cucumbers

radishes

scallions

cottage cheese

salt and pepper (to taste)

Peel, half, and slice the cucumbers.

Wash and thinly slice the radishes.

Chop the scallions.

Place all the ingredients into a medium salad bowl and sprinkle with some salt and pepper.

Stir everything together and enjoy!

Cucumber Radish Salad

This easy, refreshing cucumber radish salad is the perfect summer side dish for hot days!

mini cucumbers

radishes (one bunch)

green onion (thinly sliced)

dill (roughly chopped)

olive oil

lemon juice

kosher salt and black pepper (to taste)

Slice

Thinly slice the radishes and cucumber with a knife or mandoline. I prefer a mandoline as it&#39;s super fast and keeps the slices uniform in thickness.

Stir

In a small bowl, stir together the olive oil, lemon juice, salt, and pepper.

In a medium mixing bowl, add the cucumber, radishes, green onion, dill, and dressing. Stir to combine.

Serve

Transfer the salad to a serving bowl and sprinkle a little extra salt and pepper, if you&#39;d like.
