10 Minute Easy Asian Cucumber Salad Recipe

Add VERY thinly sliced cucumber, sliced red onion, diced red pepper, and sesame seeds to a medium size bowl. Set aside.

In a small bowl mix together rice wine vinegar, honey, toasted sesame oil, red pepper flakes, and sea salt .

Add dressing to the cucumber bowl. Toss to mix everything.

Serve immediately or cover and let sit in the refrigerator for an hour or two to let all the flavors meld.

Asian Cucumber Salad

Creamy German Cucumber Salad, or Gurkensalat, is a fresh and simple side dish featuring thinly sliced cucumbers in a sour cream and dill dressing!

Creamy German Cucumber Salad (Gurkensalat)

sour cream

pressed (or finely minced/mashed garlic)

white wine vinegar

dill

sugar

salt (DIVIDED)

black pepper (to taste)

cucumbers (such as 2 large English cucumbers)

In a medium bowl, stir together the sour cream, garlic, white wine vinegar, dill, sugar, 1/4 teaspoon salt, and pepper until well-combined. Cover and refrigerate.

Peel and very thinly slice the cucumbers. Add the cucumber slices to a colander placed over a deep bowl. Sprinkle with the remaining 3/4 teaspoon salt and stir well to coat all of the slices. Loosely cover with a paper towel (or a clean kitchen towel) and allow to drain for 2 hours, stirring every 20 minutes or so.

After 2 hours, press down on the cucumbers in the colander to extract any extra moisture. Spread out the slices on a couple of paper towels and pat dry. Remove the dressing from the fridge and stir in the cucumber slices. Either serve immediately or return to the refrigerator for 1 hour or up to overnight. Just before serving, adjust the salt and pepper, to taste.

Cucumber Salad

water (60 milliliters)

vinegar (120 milliliters)

sugar (78 milliliters)

English Cucumbers (large)

onion

dill (fresh)

tbsp mint

Add water, vinegar, and sugar to a medium pot. Place on medium high heat and stir until sugar is dissolved, then remove from heat.

Halve and thinly slice one small red onion. Place onion sliced in the vinegar solution, mix and set aside.

Remove some skin from the cucumbers leaving dark stripes. Thinly slice the English cucumbers.

Place cucumbers in a large bowl, sprinkle with salt and toss then cover and chill for 30-40 minutes.

After sufficient resting time drain excess juice from cucumbers.

Chop the fresh dill and mint. Pour dressing and onions on cucumbers. Sprinkle with dill and mint. Toss and serve.

Easy Cucumber Salad

A classic cucumber salad with cucumber, onions and dill that&#039;s simple to prepare and delicious. It&#039;s crisp, flavorful and cooling. Watch my quick video above to see how easy it is to make!

Easy Cucumber Salad Recipe

English cucumbers (thinly sliced)

tbsp kosher salt

red onion (thinly sliced)

scallion (thinly sliced)

dill (chopped)

tbsp champagne vinegar

tsp honey

pepper (to taste)

Add the sliced cucumber to a colander and toss with the salt.&nbsp;

Set the colander in your sink or on top of a plate, as the salt will pull liquid from the cucumbers. Let this sit for 20 minutes, then rinse the cucumber with cold water.

Add the drained cucumber to a salad bowl along with the red onion, scallion and fresh dill.&nbsp;

Stir the vinegar and honey together in a separate small bowl, then pour on top of the salad.

Garnish with pepper and additional fresh dill leaves.

Creamy cucumber salad tossed with a tzatziki-inspired yogurt dressing. Salting the cucumbers for 30 minutes before making the salad helps to draw excess water out and makes the cucumbers taste even more cucumbery. As this salad sits, the flavor gets better and better. Keep in mind; however, the cucumbers will continue to release water, thinning the dressing out a bit. We&#8217;re okay with this, though, since the cucumber &#8220;water&#8221; adds even more flavor to the dressing. If the dressing gets too thin, add another spoonful of yogurt.

Korean Cucumber Salad - Oi Muchim (오이무침)

tbsp gochugaru ((Korean red pepper flakes))

tsp rice wine vinegar

tsp sesame oil

Slice the cucumbers and gently toss them through with 1 tsp of salt. The salt will draw out the moisture from the cucumber.

Place the cucumber in a colander or sieve over a mixing bowl to catch the water. Let it sit for at least 30 minutes.

Chop the whole sprig of scallion or green onion.

Mince enough garlic to yield 1 tsp, or you can use the Korean minced garlic in a jar.

In a medium-sized mixing bowl, add the dried-out cucumber, scallion or green onion, and garlic. Then add gochugaru (Korean red pepper flakes), rice wine vinegar, sesame oil, sesame seeds and sugar. Gently mix them together until the cucumber is well coated.

Serve.

(260 grams) medium cucumber (or 3 small cucumbers)

garlic (minced)

soy sauce

tbsp rice vinegar (or white vinegar)

tbsp Gochugaru (or to taste)

tbsp sugar

Thinly slice the cucumber to about 1/4 inch thickness.

Add the cucumber to a large mixing bowl, followed by the rest of the ingredients.

Toss well with your hands or a pair of tongs until the cucumbers are evenly coated and the sauce is absorbed, for about 2-3 minutes. Serve immediately and enjoy!

Asian Cucumber Salad comes together in 10 minutes and is packed with flavour!

Persian cucumbers (often called mini cucumbers)

soy sauce (can sub tamari)

rice vinegar

tbsp chili oil

Use a mandoline to thinly slice the cucumbers. You can alternatively just thinly slice them with a knife.

Mix the soy sauce, rice vinegar, sesame oil and chili oil together in a large mixing bowl.

Add in the sliced cucumbers and sesame seeds and toss them together.

I don't usually love cucumbers but in this salad they were AMAZING! so good!

This cucumber salad recipe is the perfect side dish for summer cookouts! I list the pickled mustard seeds as optional, but I highly recommend including them. They really take this salad over the top.

Make the pickled mustard seeds, if using. Combine the vinegar, water, sugar, and salt in a small pot over medium heat. Bring to a simmer, stir in mustard seeds, reduce the heat, and cook over low heat for 30 minutes or until the mustard seeds are plump. Remove from the heat and let cool to room temperature. Store in the refrigerator for up to 2 weeks.

Make the salad. In a large bowl, combine the vinegar, agave nectar, cucumber, onion, salt, sesame oil, and dill. Toss to coat and chill for 10 minutes. Transfer to a serving bowl, leaving some of the excess water behind. Top with fresh mint, dollops of pickled mustard seeds, if using, and a drizzle of olive oil, if desired. Season to taste and serve.

Bring approximately 5 cups of water to a boil. Meanwhile, peel and thinly slice the red onion.

Mix the rice vinegar with the sugar in a medium jar or bowl. Set aside.
