Cucumber Sandwiches

mayonnaise

dill (chopped)

chives (chopped)

garlic powder

salt & pepper

With a hand mixer mix cream cheese and mayonnaise in a small bowl until smooth. Stir in herbs, garlic powder and salt and pepper to taste.

Spread bread slices with cream cheese mixture.

Thinly slice cucumbers. Layer over half of the bread slices.  Top with additional herbs if desired.

Top with remaining bread slice, remove crusts if desired and cut each sandwich into 3 pieces.

Serve immediately or cover and store up to 24 hours.

Lemony Cucumber Cream Cheese Sandwiches

oz whole cream cheese, softened to room temp

TB chopped fresh dill

Zest and Juice of half a large lemon

Salted butter, softened for spreading on bread slices

kosher salt

large cucumber, seeded and thinly sliced, thoroughly dried with paper towels

Combine

in a small bowl, combine cream cheese, fresh dill, lemon zest, and lemon juice. Add enough kosher salt and pepper to taste.

Assemble

butter each slice of bread (prevents sogginess.) Lay slices with butter-side-up on a work surface. Evenly distribute the cream cheese mixture onto each slice. Arrange towel-dried cucumber slices on top of the first 3 slices of bread. Top with remaining bread. Slice off the crusts. If not serving immediately, wrap tightly in cling wrap and chill for up to 24 hours.

when ready to serve, slice into 4 triangles per sandwich. Cover and chill any leftovers. 

I love how easy to make these sandwiches are and can already see them being great as a party dish or appetizer.

Made these sandwiches for a baby shower and they were a hit! Love the combo of dill and cucumber, so light and fresh.

High Society Cucumber Sandwiches – the Dos and Don’ts | Ready in 5 minutes!

Cucumber Sandwiches are an appetizer must for a tea party, Mother&#039;s Day brunch, baby shower, bridal shower, or any get together. Simple finger food that&#039;s cool, fresh, light, and so delicious!

white sandwich bread ((about 1 loaf), crusts removed)

English cucumber

cream cheese (, softened)

dill

chives

black pepper (,

Peel the cucumber in stripes and cut into 1/8-inch thin slices using a mandolin or sharp knife. Place the slices on paper towels and sprinkle with coarse salt. Let rest for 15-30 minutes to extract moisture. Pat dry with clean paper towels.

In the meantime, make the spread. In a medium bowl, using a handheld mixer, blend together the softened cream cheese, mayo, dill, chives, lemon juice, garlic powder, and salt.

Spread one side of each slice of bread with the herbed cream cheese.

Layer cucumber slices over half of the bread slices. Season with fresh cracked black pepper, to taste. Top with remaining bread slices, cream cheese mixture down. (At this point, you&#039;ll have 8 full sandwiches.)

Using a sharp Chef&#039;s knife, cut each sandwich into quarters, pushing through the bread down to the bottom. So you have 32 tea sandwiches.

Serve right away and enjoy!

white bread

¼ English cucumber

Make chive butter by mixing chopped chives and butter. Set aside.

Slice cucumber. Blot cucumber slices with paper towels.The cucumber needs to be cut into two different thicknesses. Use a mandoline slicer to cut cucumber into 2 sizes. 4 slices at 1/8&quot; and 4 slices at the thinnest setting so that it&#039;s paper thin. After slicing the cucumbers, place them flat on paper towels and blot to make sure they&#039;re dry.

Find a round cookie cutter that&#039;s the same size as the sliced cucumber.

Cut circles out of the bread using the cookie cutter.Avoid cutting the crust. Cut 8 bread circles.

Assemble tea sandwiches.Spread a thin layer of chive butter on the top side of the bread, add a slice of the 1/8&quot; cucumber, then top with a piece of bread that buttered on the side that faces the cucumber. Next, loosely fold the thin cucumber slice in half and skewer it in place with a cocktail fork.

Lay the slices of bread out on a parchment-lined baking sheet and freeze for at least one hour. This will make slicing the sandwiches with clean edges a lot easier.

Prepare the dilly cream cheese dip. Add the cream cheese, dried dill, garlic powder, salt, pepper, lemon juice, and sliced green onion to a bowl. Whip the ingredients together until everything is evenly mixed and the cream cheese is soft and spreadable.

When you&#39;re ready to make the sandwiches, peel the cucumber if desired, then slice it very thinly.

Take two slices of bread out of the freezer at a time and spread about 1.5 Tbsp cream cheese over the surface of each piece of bread, from edge to edge. Layer the cucumber slices over one piece of bread, then top with the other slice (cream cheese side facing the cucumbers).

Carefully slice the crusts off the bread, then cut the sandwich into two or four pieces (four small pieces is great for finger foods or party appetizers). Repeat until all the sandwiches are assembled. If you have any leftover cucumber slices, place them on top as garnish. Serve within 1-2 hours of assembly.
