Greg has always been fond of Thai cuisine, but found a real love for it after gigging there, especially for Thai green curry. Now, the base of any good curry is the paste, so it’s worth the effort to hunt out all the ingredients. Just remember, a little goes a long way, so make a big batch and freeze it in portions for future use.

Greg Davies' Thai green chicken curry

600 g free-range chicken thighs

x 400 g tins of light coconut milk

kaffir lime leaves

palm sugar

fish sauce

baby Thai aubergines

fresh Thai sweet basil (30 grams)

Curry Base (Indian Base Gravy)

Vegetable Oil: 140 milliliters

Brown/White Onion: 700 grams

Green Pepper: 1

Carrot: 1

Garlic Paste: 1 tbsp

Ginger (Grated): 1 tbsp

All Purpose Seasoning: 1 tbsp

Coriander Powder: 1 tbsp

Cumin Powder: 1 tbsp

Turmeric Powder: 1 tbsp

Tinned Tomatoes: 300 grams

Water: 3 litres

Vegetable Oil: 150 milliliters

Brown/White Onion: 750 grams

Paprika Powder: 1 tsp

Swap your usual Friday night takeaway for this amazing and comforting homemade chicken curry. It’s fresh, fragrant, crammed with flavour, and the charred chicken is so ridiculously tender it falls right off the bone. Everyone needs to try this super-tasty Gurkha curry – trust me, it’s happiness guaranteed and people go mad for it.

250 ml fat-free natural yoghurt

VEGAN MAKHANI CURRY SAUCE

long green chilli (green cayenne pepper, sliced)

kasoori methi* (dried fenugreek leaves)

ginger garlic paste

tomato passata

cardamom

sweet paprika

sea salt flakes

rapadura sugar

Place oil in a heavy bottomed small saucepan on medium heat.

Add bay leaves and green chilli. Sauté for a few seconds. Reduce heat to low and add kasoori methi and ginger garlic paste. Sauté for another few seconds until fragrant and starting to turn golden.

Add tomato passata, garam masala, cardamom, paprika, salt and rapadura sugar.

Cook for 8-10 minutes until the sauce has turned a shade darker and oil starts pooling around the edges.

Add coconut milk. Cover and simmer on low for approximately 20 minutes until rich and fragrant. If it starts to thicken a lot, add 1/4 cup water.

The sauce is ready to use at this point but I like to make it smoother by cooling it, removing the bay leaves and blending it briefly in a small food processor. The sauce is ready to be mixed with pre-cooked protein or roast veggies. It can also be packed away in freezer-safe containers or zip lock bags and will keep well in the freezer for up to two months.

A delicious addition to any curry – work quickly, and remove from the pan while still flexible and before they take on too much colour.

Who doesn’t love a curry? This brilliant curry sauce recipe heroes store-cupboard ingredients you can pick up from your local shop, and can be used in loads of ways. I’ve used chicken here, but you could absolutely use salmon, white fish or prawns – just cook them through in the sauce. Or, you could celebrate veggies – simply roast chunks of squash, sweet potato, cauliflower or aubergine tossed in curry paste, then add to your sauce to serve. Or just serve the sauce as it is with rice or flatbreads – winner!
