Baked curried chicken drumsticks are an easy to make dinner with quick prep and minimal dishes. They're tender, delicious, and packed with flavour.

Baked Curried Chicken Drumsticks

lb. chicken drumsticks, with skin (about 10 pieces)

olive oil

garlic,

salt

black pepper

paprika

yellow curry powder

Worcestershire sauce

balsamic vinegar

fresh parsley, finely chopped (for garnish)

Using a paper towel, pat dry the chicken drumsticks. Place them into a ziploc bag.

In a small mixing bowl, combine oil, garlic, salt, pepper, paprika, curry powder, Worcestershire sauce and balsamic vinegar and mix well with a spoon until smooth. Add the marinade into the ziploc bag and toss to combine with the chicken. Press the air out of the bag and seal tightly. Press the marinade around the chicken thighs to fully coat. Place the ziploc bag in the refrigerator and marinate for at least 1 hour, up to overnight.

Arrange the marinated chicken drumsticks on a large half sheet baking pan and bake for 40-45 minutes, turning over once halfway through baking, until the skin is crispy and the internal temperature for the chicken reaches 165 F as read on a meat thermometer.

Let the drumsticks cool for 5 minutes, then garnish with parsley and serve.

These curry seasoned chicken drumsticks are an easy weeknight dinner recipe!

Curry Seasoned Chicken Drumsticks

curry powder

cumin

garlic powder

¼ tsp pepper

chicken drumsticks

tbsp plain Greek yogurt

½ lemon, juiced

If using the oven, preheat oven to 425 degrees F.  If using the air fryer, no preheating is necessary.

Combine the curry powder, cumin, garlic powder, salt, and pepper in a small bowl.  Stir until combined.

Place the chicken drumsticks, Greek yogurt, lemon juice, and spice mixture in a zip top bag.  Close the bag and shake it a bit, using your hands to move the chicken around so that everything is well coated.  Marinate in the fridge for 30 minutes.

If baking in the oven:  Remove the drumsticks from the bag and place them on a baking sheet, discarding any extra marinade left in the bag.  Bake at 425 degrees F for 40-45 minutes, or until chicken hits an internal temperature of 165 degrees F.

If using the air fryer:  Remove the drumsticks from the bag and place them in the basket of the air fryer, discarding any extra marinade left in the bag. Air fry at 400 degrees F for 10 minutes. Flip, then air fry again for another 12-15 minutes, or until the chicken hits an internal temperature of 165 degrees F.
