The Cynar Negroni is an intriguing spin on the classic featuring this Italian liqueur! It gives it a bitter, citrusy, and mellow flavor.

For the garnish: Lemon peel

Combine the gin, sweet vermouth, and Cynar in a cocktail mixing glass (or any other type of glass). Fill the mixing glass with 1 handful ice and stir continuously for 30 seconds.

Add ice to a lowball glass, and strain the drink into the glass.

Use a knife to remove a 1″ wide strip of the lemon peel. Squeeze the lemon peel into the drink to release the oils. Gently run the peel around the edge of the glass, then place it in the glass and serve.

I’ll admit it: I have a mild case of Negroni fatigue. It’s a good drink, for sure — and when it’s beautifully made, I readily succumb to its charms — but its ubiquity in recent years has become a tiny bit tiresome. So I welcome its rarer, lighter cocktail cousin, the Cyn Cyn, in which Cynar — the wonderful, mysterious, arguably underappreciated amaro made with artichoke — replaces Campari. It’s a favorite aperitivo of the author Elizabeth Minchilli, whose elegant, straightforward recipe this is.

Meyer lemon (if possible — if not, regular lemon will suffice)

Pour liquids into a rocks glass, and add a squeeze of Meyer lemon. Add as much ice as will fit. Optional garnish: a twist of lemon peel.

Cynar is a low-proof, bittersweet amaro derived from artichokes, among many other ingredients. Italians typically drink it over ice with a slice of orange. But it has found a home in many cocktails thanks to adventurous American mixologists who not only treat it as a supporting player, but also sometimes as the foundation of a drink. Such is the case with the Bitter Giuseppe, a creation of the Chicago bartender Stephen Cole. The cocktail calls for a full two ounces of Cynar. Though audacious in concept, the drink is easy to understand if you think of it as a Cynar manhattan. The lemon juice, lemon twist and extra bitters do much to lighten up the mixture, which is brighter and more buoyant than you might expect. A great aperitivo cocktail.

Combine liquid ingredients in a mixing glass three-quarters filled with ice. Stir until chilled, about 30 seconds. Strain into an old-fashioned glass over large ice cube. Garnish with twist.
