Korean Pickled Radish (Danmuji)

Large Daikon radish (about 600 grams)

Turmeric powder

Sugar

Water

Rice vinegar

A large daikon radish, peel off its skin. Cut the radish crosswise into the length of your container.

Cut the radish lengthwise into ½-inch wide strips.

The radish can also be sliced into half-moon shape thin slices.

Put sliced radish into a large bowl, sprinkle 1 tbsp of salt over the radish. Rub the salt evenly on radish. Set aside to marinate for 30 minutes.

In a small saucepan, add turmeric powder, sugar, salt, and water. Bring to a boil. Stir until all the sugar has dissolved. Turn off the heat. Add rice vinegar to the saucepan. Set aside.

After the radish strips and slices have been marinated for 30 minutes, drain, rinse with potable water, squeeze out excess water, put radish strips and slices in clean containers.

Pour the turmeric vinegar mixture over the radish.

Let it cool down, cover the lid and keep in the fridge overnight before using.

Homemade picked radish can last in the fridge for up to 1 month.

This daikon radish salad with cucumbers is a bright and flavorful side dish. It has a zesty sesame and rice wine vinegar dressing.

You can use either purple or white daikon radishes for this salad - they both taste great but the purple has a bit more of a colorful pop!

All purpose flour or equivalent (as needed for dredging, optional)

Flavorless cooking oil

Bring a pot of lightly salted water to a boil, then add the daikon, and simmer for a minute or two, or until they’re tender and taste good to you. Remove the daikon, drain and pat dry.

Toss the daikon with the flour, tap off any excess, then brown well in the oil or lard. Remove the daikon, drain out any scorched oil, then add the mushroom ragu and heat through. keep the radishes warm in a preheated oven.

Daikon Radishes

Stir the butter into the mushroom ragu, adding a little liquid if the pan threatens to dry out. Swirl the pan and stir on medium heat, until the butter is melted and the sauce starts to thicken.

Off the heat, add a dash of lemon juice, then double check and correct the seasoning for salt and pepper. Mound some wilted greens on the middle of each plate, lay three slices of daikon on each, then ladle the mushroom sauce over the top, sprinkle with the fresh herbs and serve.

For a family style dish, arrange the daikon slices on top of some wilted or fresh greens on a platter and pass the sauce separately.
