"Squid Game" Dalgona Candy

Dalgona is a type of honeycomb toffee made with sugar and baking soda. It&#39;s really fun to make and what&#39;s more, delicious!

Dalgona Candy (Korean Honeycomb Toffee)

Tbsp sugar (, white

baking soda (, small pinch (it's hard to measure, but about 1/32 tsp))

Add the sugar to a ladle and then hold it over low heat. Stir around the sugar with a chopstick from time to time until it starts to melt. The sugar will start to melt around the edges first and it usually takes about 1 minute to reach this point. Once this happens, start stirring more vigorously. You also need to control the heat, by lifting the ladle off or moving it closer to your heat source. It will take about 3-4 minutes to completely liquidize; it should end up smooth with no lumps.

Bring the ladle to the side of the stove (no heat area), and slowly and carefully add a pinch of baking soda. Make sure you don’t add too much, as it can burn quickly and make the dalgona taste bitter. Stir quickly and thoroughly until the baking soda is fully dissolved; You will see the mixture turning into a light caramel-color. While stirring, bring the ladle closer to the heat for 3 to 5 seconds to give the mixture a fluffy and airy texture while keeping it warm.

Pour the melted sugar mixture onto a baking sheet covered with a silicone mat or baking paper, scraping with a silicone spatula.

Let it cool for about 45 seconds, then lightly tap with a silicone spatula to see if the dalgona sticks to it. If it doesn’t, press down the dalgona using a hotteok press for 4 to 5 seconds to flatten it. You can use any smooth, flat, non-stick object like a small stainless steel pot to press it down.

To create a pattern in the candy, press a cookie cutter into the middle of the candy and remove it quickly. If you press hard and firmly, your pattern will come out easier - but if you press lightly, it will be difficult to get the pattern out. Quickly remove the cookie cutter.

Let the dalgona candy cool for about one minute or until it hardens. Serve.

The &quot;Dalgona&quot; Whipped Coffee that&#039;s taking over the internet + Whipped Matcha!

Dalgona Coffee + Whipped Matcha

Using a large mixing bowl, combine the instant coffee, sugar and hot water. You can either whisk everything together by hand, or use an electric hand mixer. Whisk until all of the ingredients are combined and continue whisking until it develops into a creamy, glossy caramel color and can form soft peaks. If whipping by hand with a whisk, this could take a good 5 to 8 minutes depending on how fast you are whipping.

This recipe makes one coffee drink. Place some ice cubes into your desired glass. Pour in your milk of choice and top with the whipped coffee. Feel free to sprinkle on some cocoa powder if desired, stir together and enjoy!

For the Dalgona Coffee

Make simple syrup: Bring the sugar and the water to a boil over medium to medium-low heat. Stir until all of the sugar is fully dissolved. Lower the heat to low and let sit there for a minute or two, and then turn off the heat.

Using an electric hand mixer (you can whisk by hand but will have to do so pretty vigorously if you do this by hand with a whisk), beat the egg whites until they get frothy. With the electric hand mixer still going, slowly pour in the simple syrup and keep whipping until the eggs start to turn white and form soft peaks.

Add in the matcha powder and continue to whip on high until all of the matcha is combined (I also used a rubber spatula to scrape the sides of the bowl to incorporate everything) and everything is smooth and creamy. Be careful not to over whip or everything will get runny.

Place some ice cubes into your desired glass. Pour in your milk of choice (I love oat milk with this) and top with the whipped matcha. Feel free to sprinkle on some matcha powder if desired, stir together and enjoy! I think this was enough whipped matcha for two drinks.

For the Whipped Matcha

These dalgona scones are super easy, even for someone who dislikes working with sugar. They were all the rage last year on Instagram in Korea.

unsalted butter

mL milk

white sugar

g baking soda

In a large bowl, add flour, sugar, salt, and baking powder together. Mix to combine.

Prepare the wet mix. Whisk the egg and milk together. Reserve 1 tbsp to brush the scones before going into the oven. Place in the refrigerator while preparing the butter.

Cube the cold butter into small "pinky-sized" pieces. If the butter starts to soften at any point, put it in the freezer.

Add the cold cubed butter into the dry mix. Using a pastry scraper, break apart the butter into pea-sized pieces.

Slowly drizzle in the wet mix together until it forms a shaggy dough. Depending on the humidity, you may not need to use all the wet mixture.

Put the dough in a plastic bag and flatten it. Place in fridge for at least 1 hour or overnight. You can also freeze this dough whenever you want fresh scones!

Preheat your oven to 190C /375F.

Divide the dough into six equal pieces.

This is my tip for beautiful crumbly scones: Tear the dough and layer the pieces on top to form a rough shape. Do not press on the dough too hard; the scones should just bearly hold together.

Place the scones on a parchment-lined baking tray.

Brush with the reserved egg wash and place it in the oven. Drop the oven temperature to 180C and bake for 20 minutes or until golden brown.

Take out the scones once ready and cool until the dalgona is ready.

Mix sugar and water in a large pot. The mixture will almost become ten folds the original size, so make sure to have a large pot.

Heat the pot on medium. Leave the saucepan and do not agitate it.

Let the sugar melt and simmer until it turns into a pale golden color. This should take around 8 minutes. Do not leave the pot unsupervised as it will turn dark very quickly.

Add the baking soda into the pot and whisk quickly using a spatula. This process is to break apart the baking soda and aerate the dalgona to have large air bubbles similar to a honeycomb structure.

Scoop the dalgona mixture on top of the scones. Let it cool. I like to eat the dalgona scones when they haven't been completely set and has a slight chewiness, but you can also let it cool further for a crisp finish.

Scoop excess dalgona and cool in room temperature or in the fridge for 30 minutes. Break it apart using a hammer. You can also find a dalgona coffee recipe here!

In a mixing bowl, combine the instant coffee and sugar with 2 tablespoons of hot water, then beat together using an electric whisk. The mixture will start to turn shiny and smooth as you whisk. Prepare All Ingredients

As a first step, prepare all of the ingredients for the chia pudding and coffee topping. 

Grind Chia Seeds

Add the Chia seeds into a magic bullet or food processor and grind.

Add Milk and Sugar Sweetener and Mix

Once your chia seeds are blended into a powder, add a nut milk to the same container and sugar sweetener. Close the lid and remix it. 

Pour into the Glass

Pour into the glasses in which you plan to serve your pudding and store in the refrigerator until you are done with topping. 

Prepare Dalgona Coffee Topping

Place instant coffee, sugar sweetener, and boiling water in equal parts into the food processor and start mixing it. It will take approximately 3 to 4 minutes until the foam begins forming.
