Water

Preheat oven to 200 degC. Grate the butter into combined flour and salt, then rub with fingertips until mixture resembles breadcrumbs.

Make a well in the centre and pour in the water. Quickly mix the dough with a kitchen knife until it comes together.

Tip the dough out onto a lightly floured bench and knead for 2 minutes until smooth.

Shape into a 20cm-wide disc and place on a lined baking tray.

Using a sharp knife, mark the damper dough into quarters.

Bake for 30 minutes until your damper is golden and sounds hollow when tapped.

Preheat your oven to 180˚C (360˚F), and line a tray with baking paper.

Combine

Next, place the self-raising flour and salt in a large bowl. Add the butter cubes and rub into the flour with your hands to combine.

Stir

Form a well in the centre, then pour in the milk and water. Give everything a really good stir until it forms a nice dough. Tip: If the dough is too sticky to work with, you can add a little extra flour.

Divide

Divide the dough into four portions for tasty mini dampers, or make one large damper.

Slice

Now pop your dough onto the lined tray and slice a cross into the top using a sharp knife.

Bake

Bake for around 25 mins at 180˚C (360˚F) until your gorgeous damper is golden brown and delicious. Tap the bottom and your damper should sound hollow - that&#39;s when you know you&#39;re done!

A very traditional no yeast bread in Australia made from flour, salt, water and/or milk. It’s an Aussie tradition to bake this with dinner when you’re camping in the outback.

Historically a staple of swagmen, drovers, stockmen, travellers… and hungry campers alike, Australian Damper is traditionally cooked in campfire ashes or in a cast iron camp oven. But the good news is it couldn’t be easier to bake at home.

Damper is our go-to for when we want a no fuss, no yeast bread we can throw in the oven and have ready in half an hour to serve with dinner.

While it is classed as a bread, we find it quite dense, and more like a crumbly scone in texture, which makes it perfect for soaking up soups and stews.

Damper - Aussie Camp Bread Recipe [Just 5 Ingredients!]

Damper is a brilliant, easy bread to mix, bake, and serve with lunch.  We've added our Bush Tucker Rub Spice Blend to the dough with cheddar cheese and sun dried tomatoes for a bread that's hard to resist just eaten on its own out of the oven.

Bush Tucker Damper

tsp Herbie’s Bush Tucker Rub

cheddar cheese, grated

sun tomato

Combine flour and salt and rub in butter to crumb texture (or simply blitz in a food processor for 15 seconds).

Add in spices, cheese, sun dried tomato and milk and mix to form a dough.

Knead gently on a floured surface then shape into a round of approximately 12-15cm diameter.

Score lines into 6 for ease of pulling apart to serve and dust with extra flour.

Bake for 30 minutes or until golden.  Serve warm.

This was our morning tea today! Wow. The damper looked amazing, smelt so delicious and best of all, is tasted so good! This recipe is so simple, a great one for the kids to get involved in. Recipe by @ansadler

Ginger beer damper recipe

Ginger Beer

Step 1

Heat your oven to 200 degrees. This is important, it needs to be nice and hot.

Step 2

Place the flour, cream and ginger beer into a large mixing bowl and use a butter knife to combine. Don’t over mix the ingredients! Doing so will give you a tougher damper. Once it all comes together tip it out onto a floured surface and start kneading the damper, gently, only for about 30 seconds or so. You will see the damper come together and that’s the time you need to shape it into a mounded disk shape and give it a pat!

Step 3

Place it on a tray lined with baking paper and using a sharp knife dipped in flour, mark the top of the damper. I like to mark it with 8 lines. Sprinkle some flour over the top and you are done.

Step 4

Bake it in your 200 degree oven for about 30 minutes. You will see the top of the damper turn golden brown and when you tap the top it will sound hallow.
