Place the dates, walnuts, almond butter, honey, and salt into a food processor and blend until smooth.

You will need to stop and scrape the sides as needed. The mixture should come together like a dough when it&#039;s done.

Separate the dough into 14 evenly sized balls. Roll the balls in coconut and serve.

Store in an airtight container.

These date and nut energy bites are backed with fiber, protein and healthy fat and make for one in amazing healthy snack.

shredded coconut (I like this brand of unsweetened shredded coconut)

shredded coconut for rolling

dried cherries (I like dried tart cherries)

dark chocolate chips, melted

Add all of the ingredients to the bowl of your food processor and blend until the nuts are well chopped and a thick “dough” starts to form, about 3-5 minutes of processing. If the ingredients are chopped into super small pieces but the dough isn’t coming together, try adding a teaspoon of water at a time (up to a tablespoon or two) to encourage everything to come together.

When the ingredients are well incorporated, remove the blade from the food processor.

Take 1 large tablespoon of the “dough” and roll it into a ball in between your hands.

Keep the balls in the fridge for up to a month or in the freezer much longer.

Use a small cookie scoop or scoop out a tablespoonful of mixture and roll into a ball with your hands. Place on a parchment lined baking sheet. Repeat with remaining mixture.

Place the baking sheet in the freezer for 10 minutes.

Meanwhile, melt the coconut butter over a double broiler on the stove or in the microwave. Stir frequently and if using the microwave only do for 15- 20 seconds at a time till completely melted. Remove the bliss balls from the fridge and drizzle the melted coconut butter on top. Allow to set and transfer to an airtight container and store in the fridge for up to 7 days.

Chocolate Brownie Date Balls

walnuts (2.6 oz total)

Medjool dates

pumpkin purée

cocoa powder (I used Dutch process)

Place 1/3 cup of the walnuts in a food processor fitted with a metal blade.

Process until nuts resemble coarse sand. Transfer to a small bowl and set aside.

Add remaining walnuts to the food processor and process until finely ground.

Add the dates, pumpkin purée, cocoa powder, salt and vanilla extract and continue to process until ingredients are combined and smooth.

Using a spoon (or your hands), scoop and roll mixture into 8 equal (golf-ball- size) balls.

Roll each ball in the reserved walnuts and serve immediately or store in the freezer or the fridge.

all you need is 5 ingredients and 15 minutes to make these delicious date balls!

Chocolate Date Balls

cup walnuts (plus optionally an extra 1/2 cup crushed walnuts

cup cocoa powder

tbsp chia seeds (optional)

Blend all the ingredients together in a food processor until it forms a dough.

Use your hands to roll the dough into 12-15 even balls.

Roll the balls in the crushed walnuts if desired.

Store in an airtight container in the fridge.

oats (any kind will do (Old-fashioned, quick-cooking etc))

maple syrup

Place the oatmeal and coconut in the bowl of a food processor and pulse a few times until finely ground.

Add the cocoa powder, dates, sunflower seeds, and maple syrup and pulse to combine until the mixture comes together in a sort of dough. Add a few more drops of maple syrup if it's not quite coming together, and pulse again.

Roll mixture into 1 inch balls and roll in the chopped pretzels if desired.

Coconut and Date Ball Recipe

In a small saucepan, melt the butter. Add the sugar and stir until the sugar has dissolved.

Add the vanilla essence, cinnamon and the dates and heat for five minutes until the dates are soft.

Take the mixture off the stove and transfer to a large mixing bowl.

Add the whisked egg and mix well.

Add the biscuits and coat well with the mixture.

Put the mixture in the fridge to cool for 20 minutes and then roll into medium-sized balls.

Roll in coconut and store in an airtight container, in the fridge.

These No-Bake Coconut Krispie Date Balls are made with dates and Rice Krispies and rolled in coconut. This classic Christmas cookie is a requirement in my house!

Coconut Date Balls

(311 grams) dates, chopped

unsalted butter

½ cups (285 grams) granulated sugar

eggs, slightly beaten

(15 milliliters) milk

(160 grams) Rice Krispie cereal (or similar cereal)

Remove pits and chop dates into small pieces, about the size of a dime. Dates are very sticky, if you have latex gloves, I would suggest using them.

In a large saucepan, melt butter and sugar together, stirring occasionally until the butter is melted.

Turn the heat to low and add chopped dates and cook until mixture is boiling, about 15 to 20 minutes. Stir frequently to prevent mixture from burning.

In a separate bowl, combine eggs, milk and vanilla extract. Once the mixture is boiling, take about ¼ cup of the mixture and pour it into the eggs, and whisk constantly to temper the eggs.

Remove the saucepan from the stovetop and pour the egg mixture back into the saucepan. You will want to work quickly so they do not become scrambled.

Return mixture to the stovetop and boil for about 5 minutes, stirring frequently. Remove the mixture from the heat. In a large mixing bowl, combine rice cereal with date mixture and stir until evenly coated. Allow the mixture to cool until it can be handled.

Shape date mixture into balls (1 to 2 tablespoons in size) and place on a sheet pan. For a higher yield, reduce the size of the balls.

Place the shredded coconut in a separate bowl and roll each date ball (one at a time) in the shredded coconut, gently pressing coconut into the dates. Refrigerate the date balls for one hour. Store in an airtight container and keep refrigerated or frozen.

My grandmother has made these since the 30's! (I wasn't there then 😉)
They are my personal favorite holiday cookie!

Set 16 nuts aside. Then add the remaining hazelnuts to the food processor and process until finely ground.

Using a spoon (or your hands), scoop and roll the mixture into 16 equal balls, placing 1 whole nut into each one.

Then roll each ball in the remaining hazelnuts and serve immediately or store in the freezer or the fridge.

I really wanted to like this one, but it fell short for me. I think it wasn't sweet in the way I was expecting, and the texture wasn't the same as the Ferrero Roche. This is the ONLY recipe I haven't loved from ST.

Super good, fairly easy to make and worth the effort! Gives me the candy fix I want with out all the bad stuff. Used walnuts and didn't stuff the balls. Do suggest chopping the dates for easier incorporating.

Optional: melt a 12 ounce bag of dark chocolate chips with 2 tablespoons coconut oil until smooth. Dunk the date balls and fully coat, then place back onto the parchment paper and chill in the fridge for 10 minutes or so to set.

I just made the date balls today after returning home from the grocery store. I went to my recipe file and put all ingredients in the blender then rolled the mixture into balls and put them in the refrigerator for 20 minutes. They were so delicious and filling that the date balls became my lunch! I told my husband how well they turned out and he is looking forward to a satisfying,flavorful, and healthy snack.
