Easy, 1-ingredient caramel made with creamy pureed dates. A versatile, naturally sweetened, raw caramel perfect for adding caramel-flavor to a variety of dishes.

Water ((to thin))

Add pitted dates to a food processor or high-speed blender (in my experience, a food processor works best to get a creamy texture without having to add much water).

Pulse/mix on low until small bits remain. Then stream in hot water while the blender is on until a paste is made. You will need to scrape the down sides and encourage it along periodically.

Be sure to only add enough water to form a paste - too much and it will be too liquidy. Amount will depend on your machine and size/moistness of dates.

Leave as is, or add a pinch of salt to enhance flavor (optional). Will keep covered in the refrigerator for 1-2 weeks, and often more.

Healthy Homemade Twix Bars (Vegan, Gluten Free)

almond flour

coconut oil, melted

salt

maple syrup

water

Medjool dates, pitted

oz Lily’s dark baking chocolate (1 1/2 dark chocolate baking bars)

coconut oil

Sea salt

Preheat oven to 350 degrees F. Line a loaf pan with parchment paper.

Mix together all biscuit ingredients in a bowl. Press into an even layer in the loaf pan. 

Bake for 20-25 minutes, until a toothpick comes out clean in the center.

Place in fridge to let cool for 20 minutes.

While biscuit layer bakes, make the date caramel. Soak the dates in hot water for 10 minutes. Drain and reserve 1/2 cup water.

Place dates and salt in a food processor, and add 2 tbsp reserved water.

Blend for 3-4 minutes until completely smooth. Add reserved water a tbsp at a time if needed. You may need to pause blending to scrape down the edges.

Once biscuit layer has cooled, pour date caramel over it and spread into an even layer.

Meanwhile, melt the chocolate and coconut oil in a double boiler or microwave. 

Spread the melted chocolate in an even layer over the date caramel. Sprinkle with sea salt.

Place in fridge for 10 minutes, or until chocolate is set.

Healthy Vegan Caramel Sauce (2 ways)

For this date caramel sauce, you&#039;ll need a blender. If your dates are nice and soft, you don&#039;t need to pre-soak them, though I find it easier to blend soaked dates in general. To soak the dates, leave them in hot/boiling water for 30 minutes.Then add all of the ingredients (dates, nut butter, coconut oil, vanilla extract, and salt) to the blender and blend into a smooth consistency.If you find the date caramel sauce too thick, you can either add a little of the date soaking water to thin it or even a little of your favorite dairy-free milk/cream.Be patient as this process can take time. Depending on how powerful your machine is, this date caramel sauce can take a full 10-12 minutes to become smooth and creamy.

Method 1: Sugar-Free Caramel sauce (with dates)

In method two, we&#039;ll be using unrefined maple syrup in place of traditional white sugar.All you need to do is add equal amounts of maple syrup, nut butter, and melted coconut oil, and a drizzle of vanilla extract to a bowl and mix well. Optionally, add a pinch of salt too.

Method 2: Refined Sugar-Free Vegan Caramel Sauce

Store your homemade caramel sauce in a covered jar in the refrigerator for between 1-2 weeks.You can also freeze the caramel sauce (though dates don&#039;t ever fully freeze- so that version will remain softer). I&#039;m not sure exactly how long it would last in the freezer, though I&#039;d imagine a couple of months at least.The vegan caramel sauces will thicken up as they chill. If you want it thinner, then reheat it lightly in the microwave (15-20 seconds to thin, 40-45 for a heated sauce) or over the stove, stirring frequently. If it’s still too thick, add in an extra splash of dairy-free milk/cream and stir well.

How To Store

These homemade, healthy vegan Twix bars are perfect for a guilt-free snack. Refined sugar-free, dairy-free and gluten-free but absolutely delicious!

Begin by preparing the 'shortbread' base. Combine all the base ingredients in a bowl and mix until thoroughly combined.

Line a small pan with parchment paper and spread the biscuit base over it, pressing down to level it.

Bake in the oven at 170ºC/325ºF (fan assisted) for 10-15 minutes, until a light golden color. Remove from the oven and leave to cool.

Meanwhile, it's time to prepare the caramel layer. First, check your dates - if they are very dry then soak them for 10-15 minutes in boiling water. When ready, add the dates and rest of the caramel ingredients to a small food processor or blender and blend until smooth and creamy.

Spread the caramel layer over the biscuit base then freeze for 30-45 minutes, or until the caramel layer has gotten harder ( doesn't need to be completely set).

Remove from the freezer and cut into bars of your desired size then place back in the freezer for a further 10-15 minutes.

You could also leave them uncut and simply pour the chocolate over the top of the entire dish and cut into bars. However, I like the bars to be fully chocolate coated.

To make the sugar-free 'chocolate' topping simply melt the coconut oil and mix with the raw cacao powder. If you want to add a little natural sweetener then you can too.

Mix until there are no lumps.

Dip each bar in the melted chocolate and freeze for 10-15 minutes, or until the chocolate hardens. I like to double-dip mine so then re-dip and re-freeze. Once fully set, then move to an airtight container and store in the fridge or freezer.

How To Store The Vegan Twix Bars: These caramel chocolate bars are best stored within the refrigerator, in an airtight container, for up to a week. They will also keep well in the freezer, for up to two months.  When you want to eat one, simply grab one from the freezer and give it 5-10 minutes to soften up a  bit.

Add all ingredients to a food processor and high-speed blender and process until smooth; you may need to use a spatula to scrape the sides.

Transfer the caramel into a bowl and place in the fridge for 10 minutes; once hardened, use your fingers to roll 1 tbsp balls of the caramel mixture into candy-shaped pieces. It helps to keep your fingers moist for this step!

Serve as-is, dip them in Chocolate, or top with extra flaky Sea Salt, if desired. Store leftovers in the fridge for up to two weeks &#8211; these can also be kept in the freezer for up to one month.

These were fantastic! I made these into 32 balls and dipped them in chocolate (Lily's milk chocolate chips). Easy bite-sized pieces! My go-to caramel recipe going forward!
