dates (seedless / pitted dates (250 grams))

water (, hot boiling)

Soak dates in boiling hot water for about 2 hours. If using a softer variety like medjol you can soak only for a while.

Mash the dates using a masher. Strain through a nut bag or a muslin cloth, placed over a strainer. Squeeze the pulp well to extract the juices.

Place the pulp back to the soaking bowl and add more water. Mash up and strain again.

Add this water to a heavy bottom pot. Bring it to a boil and reduce the heat.

Boil this until the mixture thickens and reaches a thick consistency. It will thicken further upon cooling.

When done it becomes glossy and thick. Cool and pour dates syrup to a clean air tight jar.

Refrigerate and use date syrup as required on your toasts, cakes, smoothies, ice creams and pancakes.

How to make date syrup

Date syrup, also known as Date Molasses, is a delicious natural sweetener that you can make with fresh dates.

Easy Date Syrup/Date Molasses Recipe

Remove the pit and the round &quot;cap&quot; from the end of the dates and chop it into quarters.

Add dates to a medium-sized pot and cover with 5 cups of water.

Add a pinch of salt and 1/4 teaspoon cardamom (optional). 

Bring the mixture to a boil then simmer for 45 minutes, stirring occasionally.

Skim the date skins that float to the surface. It&#039;s ok if you don&#039;t get them all. Towards the end of the 45 minutes, mash the dates with a wooden spoon. Or use an immersion blender, being careful not to splatter the hot liquid.

When the 45 minutes are up, strain the date mixture through a soup bag that&#039;s draped over a large measuring cup.

When the mixture is cool enough to handle, massage the bag with both hands, squeezing out as much liquid as you can. Twisting the top of the bag helps to squeeze out even more of the liquid. You should end up with 2 to 2-1/2 cups of liquid.

Strain the liquid and add to a smaller saucepan. Simmer for 45 minutes or until the liquid reduces by more than half. The liquid will thicken and get darker the longer it cooks. 

When you&#039;re satisfied with the texture and color of the molasses, pour it into a mason jar to store. It should keep for up to a month in the refrigerator.

Can be marinated for up to 2 days, or cooked straightaway.
If cooking straightaway, rub chicken with 1 tsp of salt and pepper instead of placing those in the marinade.

Prepare a large baking pan or baking sheet by covering it with parchment paper.

If you have time to marinate the chicken, place chicken pieces in a large bowl and add the garlic, cilantro, vinegar, oil, olives, capers, Medjool dates, bay leaves, 1 tsp salt and 1/2 tsp black pepper. If you are cooking the chicken straightaway, then rub the chicken with the salt and pepper prior to placing it in the marinade of garlic, cilantro, vinegar, oil, olives, capers, dates and bay leaves. Stir everything to combine, cover the bowl and let the chicken marinate for at least 2 hours, and up to two days.

Preheat the oven to 400°F.

Spread out the sweet potatoes along the sides of the baking sheet. Arrange chicken thighs, along with all the marinade ingredients, letting it overlap with the sweet potatoes. Whisk together the wine and molasses and pour over the meat. Drizzle sweet potatoes with 3-4 TBs of olive oil and sprinkle generously with 1 tsp salt and 1/2 tsp pepper.

Place Ottolenghi Chicken Marbella with dates in the oven and cook for 50 minutes, basting two or three times, until the meat is golden brown on top and cooked through.

Remove tray from the oven, transfer chicken, sweet potatoes and everything else to a large platter, sprinkle with some fresh cilantro, and serve.

Homemade Date syrup (silan):

Medjool dates (pitted)

Soak Medjool dates in 1 cup of boiling hot water for at least 1 hour. Transfer to a blender or food processor and blend (it’s ok if some chunks remain). You may need to add a bit of water to the blender. Sieve date mixture through a nut bag or double cheesecloth placed over a strainer, getting as much liquid out as possible.

Return date mixture to blender, add another cup of boiling hot water and blend again, and sieve through the nut bag or cheesecloth again. You should end up with about 1 ½ cups of date liquid.

Transfer the date liquid to a saucepan, and bring to a boil. Lower heat to medium and continue boiling, stirring often, until it reaches the consistency of honey. Remove from heat - you should end up with about 1 cup of date syrup.

Transfer the date honey to a jar, and seal well.

I was looking for a lower glycemic sweetener and this one was perfect.  I love having it on had to use in different recipes throughout the week.

It's also called silan?! I had no idea. We're big date lovers here, but I've never been sure what to do with date syrup. I made your recipe and used it over oatmeal. It was fantastic! Thanks.

I've been adding this to my kids' smoothies and they love it and I love that it's a better alternative than adding in honey or maple syrup (even though those are natural).
