How to make date paste with just ONE ingredient – a simple, healthy unrefined sugar substitute (Paleo, Vegan, Whole30) perfect for naturally sweetening tons of recipes! Find how to make, store, and use this simple date puree below!

How to Make Date Paste (Healthy Sugar Substitute | Ve, GF, Paleo)

17.8 oz dates (I used Medjool dates, pitted (about 26 dates))

If you’re using whole dates, you&#39;ll first need to remove the stones (pits) for the center of each date. To do so, I just pull the date in half by hand and release the pits. Alternatively, you can slice them with a knife lengthwise before popping out the pits.

If your dates are particularly dry or you aren&#39;t using a high-speed blender for the next step, I first recommend soaking the dates to soften them.To soak the dates: de-seed the dates and place them in a large bowl covered with HOT (or boiling) water and soak for 30 minutes. This will help plump them up and soften them (thus making it easier to blend the dates). Make sure to reserve the soaking water in case any of it is needed to thin the date paste when blending.

Step 1: Prepare the dates

Transfer all the pitted dates to your high-speed blender or food processor and process until smooth and paste-like. As the dates are very sticky and don’t have a massive water content, this will take some time to achieve the correct consistency, so I recommend giving your machine breaks every 2-3 minutes to avoid overheating.

If you’re really struggling to blend it into a paste, then add some hot water to your machine, one tablespoon at a time.The date puree is ready when you achieve a smooth homogenous, lump-free mixture.

Step 2: Blend the dates into date paste

Make ahead: you can leave the dates to soak for up to two days (in the fridge) before blending.Store: store the date paste in a clean airtight container (I store mine in a glass jar) in the fridge. For date paste without water, it should last between 3-4 months. With water, I probably wouldn&#39;t use it past one month, though I haven&#39;t tried as I nearly always make mine without water.Freeze: this date paste is also incredibly freezer-friendly and can freeze for 6 months with water or 12+ months without. I recommend portioning it into Tbsp portions in an ice-cube tray. It doesn&#39;t fully freeze either, so it’s still &quot;scoopable&quot; directly from the freezer.

Maamoul cookies are sweet, buttery, melt-in-the-mouth Middle Eastern cookies with dates or pistachio/walnut fillings. They are perfect for enjoying at Easter and Eid celebrations or year-round!

Maamoul Recipe (Middle Eastern Cookies with Dates or Nuts)

flour (all purpose

semolina

ghee (or melted butter; use dairy-free butter/coconut oil

Tbsp milk powder (or dairy-free milk powder)

sugar

Medjool dates

butter (any neutral oil like vegetable oil)

walnuts

cinnamon powder

Tbsp sugar syrup

pistachios

tsp cardamom powder

Date filling: add all the date filling ingredients to a small food processor and grind into a paste consistency. (Check the FAQs for an alternative method.) If you aren&#39;t using Medjool dates, you will probably need to soak the dates first. Simply transfer them to a bowl, cover them with hot water, and leave to soak for 10 minutes.Then, divide the mixture into 1 ½ tablespoon-sized portions and make them into balls. Then transfer them to the refrigerator.This mixture will be sticky, so it may be helpful to slightly oil your hands OR use kitchen gloves while rolling.

Nut fillings: In a food processor, roughly process the nut of choice until slightly chunky. Then mix in the spices and sugar syrup and pulse until combined. Separate into 1 ½ tablespoon portions of the walnut/pistachio filling, shape into balls, and then set aside or refrigerate.

Step 1: Prepare the Fillings

Sift the flour in a large bowl. Then mix in the semolina and ghee, mixing with your hands. After a while, the semolina will soften as it soaks up the ghee.

Cover the bowl with plastic wrap and set it aside in the fridge to rest for at least 3 hours or overnight (8-10 hours). It’s best to gently stir the mixture every few hours, too (if possible).

The following day, add the kaak spice, milk powder, and powdered sugar, and then gradually add water, just a tablespoon at a time until a dough that holds together is formed.

Step 2: Prepare the Maamoul Dough

Preheat the oven to 350ºF/175ºC.

Scoop around two tablespoons of the dough at one time and form it into a ball shape, then flatten the dough ball and hold it in the palm of your hand to form a &quot;well.&quot;

Press your filling of choice in the well and then carefully close it by bringing the edges of the dough together and sealing. Then smooth it out with your fingers.

Transfer the dough to your wooden mold of choice and press gently, but enough to take the shape well, OR use a fork to make your own patterns by hand. To remove it from the mold, tap it hard against your kitchen counter. Then repeat with the remaining ingredients.Adding a small amount of flour to the mold or using a layer of plastic wrap can make it easier to remove each cookie from the mold.

Step 3: Assemble the Cookies

Transfer the prepared maamoul cookies to a parchment paper-lined baking tray, with 1-2 inches of space between each cookie.

Transfer the tray/s to the oven and bake for between 20-25 minutes until the maamoul cookies are lightly golden.

Transfer the cookies to a wire cooling rack to cool, then dust over some icing sugar and enjoy! I love mine with a cup of tea or black coffee.

Step 4: Bake Them

Make ahead: The flour, semolina, and ghee/butter mixture can be stored covered in the refrigerator for up to 3 days before continuing with the recipe. Likewise, all the fillings can be prepared and shaped 2-3 days in advance, too. Store: Store the maamoul cookies in an airtight container on the kitchen counter for 3 days for the best flavor. However, you can often store them for up to 2 weeks (in the refrigerator). Freeze: First, flash freeze the cookies on a baking tray, transfer them to an airtight container/Ziplock bag, and store them in the freezer for 2 months. Allow them to thaw either on the counter and optionally even lightly warm them in the oven before re-serving.

Make-Ahead and Store

This healthy banana nut bread recipe contains no added sugar, using natural date paste instead, and combines banana and walnut for a delicious, yet healthy, treat!

Healthy Banana Bread (Naturally Sweetened)

whole wheat flour (225 grams)

tsp bicarbonate of soda

tsp salt

walnuts (chopped)

tBsp heaped date paste (or 4 dates mashed with 1/3 cup hot water)

eggs

bananas (2 large or 3 small ones)

tsp vanilla extract

coconut oil

Mash the bananas in a large bowl. You should be able to do this with a fork, as overripe bananas will be lovely and soft.

When you obtain a purée-like substance, add the eggs, coconut oil, homemade date paste and vanilla extract.Mix well and set aside.

In a separate bowl, mix the dry ingredients: the flour, bicarbonate of soda, salt and mixed spice.

Add the flour mixture to the banana mixture. Then mix well, until thoroughly combined.

Crush or roughly chop some of the walnuts and add them to the batter. Keep some of the walnuts aside to top the banana bread.

Incorporate the walnuts well in the mixture but don&#039;t over-mix as that will affect the texture of the banana nut bread.

Get your loaf pan ready by either lining it with a parchment paper liner or greasing it well.

Pour the batter into the loaf tin.

Shred/grate the rest of the walnuts, or chop them very finely, and sprinkle on top of the banana bread.

Bake in a pre-heated oven at  180ºC/350ºF for 1 hour.

Leave the banana bread to cool down on a rack before cutting it.

pitted Medjool dates (about 18-20 dates)

Boil water

Bring 4 cups of water to a simmer and remove the pot from the heat.

Steep

Place dates into a 4 cup glass measuring cup and cover with hot water. Let dates sit for 10 minutes to soften. Reserve 1.5 cups of the soaking liquid and drain the remaining water from the dates.

Blend

Place the dates and 1 cup of the reserved water into a high speed blender and blend until smooth. Add more water if you&#039;d like a thinner consistency. Transfer to a glass container and cover.
