delightful drizzle cakes

I love anything with lemon in it so when I found out we had to make a drizzle cake lemon was the first thing that came to mind, but I spiced it up a bit to make it special. 

For this recipe you will need a 900g/2lb loaf tin and a food processor.

Pistachio, cardamom and lemon drizzle cake

grams/3½oz shelled pistachios,

milliliters/4fl oz sunflower oil,

grams/4½oz caster sugar

eggs

vanilla bean paste

green cardamom pods, seeds

grams/3½oz plain flour

grams/1 ounces ground almonds, sifted

salt

tsp baking powder

½ tsp bicarbonate of soda

grams/1¾oz soured cream

lemons, juice only

120 grams/4¼oz caster sugar

75 grams/2½oz icing sugar

lemon juice

rose petals

Elevate a simple lemon poppy seed cake to new drizzly heights. The ring shape means you can add more drizzle.

For this recipe you will need a 25cm/10in non-stick fluted ring cake tin.

Lemon poppy seed cake

vegetable oil

flour

250 grams/9 ounces butter, softened

caster sugar

grams/1¾oz almonds

poppy seeds

tbsp lemon juice (from above)

tbsp caster sugar

tbsp limoncello (alternatively use lemon juice)

lemon,

sugar

tbsp flaked almonds

grams/4½oz icing sugar

unwaxed lemon, juice only

Mary Berry's lemon drizzle traybake cake has been a hit since the 1960s, and this is the recipe she is most asked for when stopped in the street.

Equipment and preparation: for this recipe you will need a 30x23cm/12x9in tray bake tin.

Each serving provides 290 kcal, 4g protein, 38.5g carbohydrates (of which 25g sugars), 13.5g fat (of which 8g saturates), 0.7g fibre and 0.6g salt.
