Sourdough Rolls {with Sourdough Discard}

Red Star Platinum Baking Yeast ((2 1/4 teaspoons))

In the bowl of a stand mixer, pour in the warm water and sugar.

Sprinkle the yeast over the water. Allow it to sit for 2-3 minutes. *Be sure the water isn't too hot. It should be about 110-115 degrees Fahrenheit.)

Add the eggs, oil, starter and salt. Mix gently until combined. Note: The starter does not have to be active. It can be sourdough discard.

Add 3 cups of flour and mix the dough using the beater blade until combined. At this point, add more flour, 1/4 cup at a time. I&#039;ve found that sourdough starters are often varying in consistency, sometimes thicker or thinner than other times. Add enough flour so that the bread dough feels slightly tacky. It should not feel dry, but yet shouldn&#039;t stick all over your hands. We find that 3 1/2 cups of flour works great with our starter. The dough will get less sticky as you knead it, so be careful not to add too much flour at the start!

Knead the dough using the dough hook on the stand mixer for about 7 minutes or until the dough feels smooth, springs back if you touch it and doesn't feel too sticky. *You can also use the dough setting on a bread machine to knead the dough...or knead by hand! Just be careful not to add too much flour.*

Place the dough in a greased bowl, cover it with cheesecloth or loosely with plastic wrap and set it in a warm spot. Allow the dough to rise for 1 hour or until doubled.

Divide the dough into 12 balls. (Or if you want smaller rolls, make 15.)

Roll the dough between your hands to make a smooth ball, then place the dough balls in a greased 9x13 baking pan.

Allow the dough to rise again until almost doubled.

In a small bowl, whisk together one egg and one tablespoon of water. Brush this egg wash on the tops of the unbaked rolls. This gives them that shiny golden brown top.

Bake the rolls in an oven preheated to 375 degrees Fahrenheit for about 20 minutes.

Serve the rolls warm and store any leftovers in an airtight container.

Use leftover mashed potatoes in these fluffy potato rolls. These soft dinner rolls stay tender at room temperature for several days.

Potato Rolls

Pour the warm water and milk (about 110-115 degrees F) into the bowl of a stand mixer.

Sprinkle the yeast over the liquids.

Add the sugar, egg, salt, potatoes, butter and flour.

Use the paddle attachment to mix the ingredients just until combined.

Then switch to the dough hook and beat on medium-high speed for 5-7 minutes. The dough should be slightly sticky.

Spray a large bowl with cooking spray. Place the kneaded dough ball into the greased bowl and cover with plastic wrap or a kitchen towel.

Set the bowl in a warm place until the dough has doubled in size (about 30 minutes).

Divide the dough in 12 dough balls (or 15 for smaller rolls).

Place the dough balls into a greased 9x13 pan.

Cover the pan and put it in a warm place, allowing the dough to rise again until almost double (about 25 minutes).

Preheat the oven to 350 degrees.

Bake the rolls (uncovered) for 17-20 minutes or until the tops are dry and firm, with a golden brown color.

Allow the pan to cool on a wire rack.

Once the rolls are completely cool, store in an airtight container.

Garnished with rosemary and flaky sea salt, these sweet and buttery dinner rolls are perfect for sopping up all that sauce and gravy goodness.

Sweet Dinner Rolls

2 1/4 – 2 1/2 cups all-purpose flour

(2-1/4 tsp.) packet Fleischmann’s® RapidRise® Yeast

1/2 teaspoon kosher salt

Combine 1 cup flour, dry yeast and salt in bowl of your stand mixer fitted with the paddle attachment and stir until blended. Combine milk, water, butter, and honey in a small microwave-safe bowl. Microwave in 30 second increments until very warm but not hot to the touch (120°F &#8211; 130°F). Add to flour mixture.

Mix for 2 minutes on medium speed, scraping the sides of the bowl as needed. Add in 1/2 cup more flour mix for 2 more minutes on high speed. Stir in just enough of the remaining flour (3/4 to 1 cup) so that the dough will form into a ball.

Replace the paddle attachment for the dough hook attachment and mix on medium speed for 6-8 minutes, until the dough is smooth and elastic and springs back when lightly pressed with 2 fingers. Alternately you can do this step by hand, kneading the dough on a lightly floured surface for 6-8 minutes. Cover with a towel and let rest for 10 minutes.

Cut the dough into 12 equal pieces and shape into balls using your hands. Place in greased 8-inch round or square pan. Cover the rolls with a towel and let them rise in a warm place, until they&#8217;re doubled in size, about 30 minutes.

Bake rolls in preheated 375ºF oven for 20 minutes or until golden brown.

For the topping combine the butter and honey in a microwave safe bowl and heat for 30 seconds until butter is melted. Mix together and brush the melted honey butter on warm rolls.

Stir the yeast, sugar, and warm water in a glass measuring cup or small bowl. Set aside in a warm place to rise. It will bubble and rise up.

While waiting for the yeast mixture to rise, cream (or mix) the sugar and unsalted butter in a large mixing bowl.*

Beat in the eggs, one at a time.

Add the yeast mixture to the butter mixture, along with an additional 1 1/2 cups warm water.

Sift the flour and salt together in a large bowl.

Gradually, add the flour in, and mix well. For this step, I like to use the dough hook on my stand mixer.

Turn the dough into a large greased bowl or stockpot, and let it rise to the top or almost to the top (it can take 2 to 3 hours). Keep the bowl or pan covered.

Once the dough has risen, turn it out onto a floured surface. Coat generously with flour by turning and shaping. No kneading is necessary, though I still like to knead it a bit just for fun.

To make rolls, roll the dough out to about a 1 to 2 inch thickness. Then cut round rolls with a cup, glass, or biscuit cutter.

Place the rolls in greased baking pans, and let them rise (this will probably take another 2 to 3 hours).

Once the rolls have risen well, bake them for about 20 minutes (maybe a little longer) at 350°. Halfway through baking, you may need to cover the rolls with aluminum foil, so they don't brown too much before they bake through.

When they're done baking, remove the rolls from the oven and allow to cool. Of course, I usually can't resist enjoying a hot roll with warm melty butter. They're so delicious!

Ultimate Dinner Rolls

(572 grams) bread flour

Combine the water, milk, 1 tablespoon of the melted butter, eggs, sugar, salt, and yeast in the bowl of a stand mixer. Add 2 cups of the flour and stir with a wooden spoon until the dough forms a rough, shaggy mass. Attach the dough hook to the mixer, turn to medium-low speed, and gradually add the remaining flour, kneading until a mass of dough begins to form. Continue kneading on medium-high speed for 4 to 5 minutes until a soft, smooth ball of dough is formed. The dough should feel elastic and slightly tacky to the touch.

Lightly spray a large clean bowl with cooking spray and place the dough in the bowl. Cover the bowl lightly with plastic wrap. Let rise for about 1 hour to 90 minutes at room temperature or until the dough is big, puffy, and about doubled in size.

Grease a 9x13-inch or similarly shaped baking pan with butter. Gently deflate the dough. Use a bench scraper, knife, or pizza wheel to divide the dough into 12 equal pieces. Shape each piece into a ball and place in the prepared pan.  Lightly cover the dough with plastic wrap and let the rolls rise for about 1 hour, or until about doubled in size.

Preheat the oven to 375°F.

Brush the rolls gently with the beaten egg. Bake the rolls for 20 minutes, or until golden brown. Brush with melted butter and sprinkle with salt. Serve warm. Store leftovers in an airtight container or ziptop bag for up to 3 days.

Preheat the oven to 375 F and line baking sheet with parchment paper.

In a small bowl, combine the almond milk, yeast, and 1 tablespoon of the sugar and proof for 5 minutes or until foamy.

In the bowl of a mixer fitted with a dough hook attachment, place the flour, salt, the remaining sugar, olive oil, and the yeast mixture. Mix on medium-low speed for 2-3 minutes until the dough is well-formed around the hook and pulling away from the sides.

Transfer the dough to a floured work surface and knead a few times to form into a ball. The dough should be sticky, but if it’s too sticky to work with, add a little more flour. Brush a large bowl with ½ teaspoon olive oil and place the dough inside. Cover with plastic wrap and set aside in a warm spot for 60 to 90 minutes, or until the dough is doubled in size.

Brush a large baking sheet with olive oil and set aside. Turn the dough out onto a clean work surface and lightly flour your hands. Divide the dough into 15 equal pieces. Form each piece into a ball by rolling on the countertop with a cupped hand. Place each piece onto the baking sheet. Dust the tops with a very slight amount of flour to keep the plastic wrap from sticking to the dough. Cover with plastic wrap and set aside for 1 hour, or until puffy.

Preheat the oven to 350°F and move the oven rack to a low position.

Bake the rolls for 20 to 25 minutes, or until lightly golden brown, rotating the pan halfway. Let the rolls cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
