Tindora Fry (Kovakkai Fry) or Ivy Gourd Fry is a healthy option to make as a side for an Indian style meal. Pair it with Dal Rice or Chapati for a healthy meal. Here is how to make it.

Tindora Fry Recipe (Dondakaya Fry)

Tindora

tbsp Vegetable oil

tsp Hing

Cumin seeds

Onion (Thinly sliced)

Coriander powder

tsp Red chilli powder

tsp Turmeric powder

Salt

tsp Chaat Masala

Heat vegetable oil in a pan.

Once the oil is hot, add hing and cumin seeds and let them crackle for a few seconds.

Add onion and fry until they turn translucent.

Add tindora, coriander powder, red chilli powder, turmeric powder and salt.

Mix well.

Sprinkle a little water.

Cover the pan and cook for 8-10 minutes until tindora are slightly softened.

They taste good when slightly crunchy.

Add chaat masala and mix well. Serve hot as a side with any Indian meal.

Dondakaya vepudu is a simple stir fried dish made of Ivy gourd. It is known as tendli or tindora in hindi.

tindora ((ivy gourd/ dondakayalu))

green chili (slit)

red chili

curry leaves

mustard

½ tsp cumin (or jeera)

¾ tbsp channa dal

urad dal

tbsp Oil

garlic

hing ((or asafoetida) (optional))

turmeric

¼ tsp red chili powder

tbsp peanuts (roasted, skinned (optional))

chana dal

¾ tbsp dried coconut (or endu kobbari)

¾ tbsp sesame seeds (nuvvulu (optional))

¾ tsp cumin (or jeera)

Soak ivy gourd in a large utensil filled with water.

Wash them thoroughly under running water.

Drain them in a colander and wipe off with a clean cloth. or Let them dry off completely.

Chop off the ends.&nbsp;

Slice them thinly vertically or horizontally. If using food processor, just add them and pulse a couple of times. I used food processor.

Preparation

Dry roast red chili, urad dal and chana dal until golden &amp; aromatic. Then add cumin, coconut, sesame seeds and garlic. When the sesame seeds begin to splutter, remove to a plate and cool completely. Powder this finely. Set aside. Use this only as needed and store the rest for later use.

Making vepudu karam or use 2 tbsp coconut

Heat a pan with oil. Then add mustard, cumin, urad dal and chana dal.

Allow the dals to fry till golden. Then add curry leaves and hing. Saute till the leaves turn crisp.

Add chopped dondakaya pieces, salt and turmeric.

Stir fry till soft cooked. If needed just simmer the stove, then cover and cook. Stir often to prevent burning.

Add vepudu karam as needed or coconut and red chili powder.

Then add the peanuts if using and stir well.

Fry till you begin to smell the coconut good. Off the stove.

Serve dondakaya fry with rice and ghee.

Making dondakaya fry

This vegan and gluten-free Ivy gourd fry side dish can be modified to suit your spice level. So, it will surely please everyone at your table or potluck!

Tindora Fry Recipe

tindora (or 4 cups)

onion chopped

mustard seeds

tsp red chili powder

turmeric powder

tsp garam masala powder

salt

tsp sambar powder

coconut oil

lemon juice

Place a nonstick or Kadai on medium heat. Once it is hot, add oil and let it heat up for a minute.

Then, add the mustard seeds and let them splutter. Add the chopped onions and fry till they turn translucent.

Next, add the tindora. Mix well and cook covered over medium flame for about six to seven minutes or until tindora is cooked.

Now add the spice powders, and salt, and mix well.

Stir and cook for a minute or two on low flame or until the raw smell disappears.

Check for seasoning and add more salt if needed.

As the Ivy Gourd starts to soften, it absorbs the flavors. Now add lemon juice and remove from the heat.

Tindora fry is ready to be served hot with rice, roti, or rasam and dal.

Kovakkai Fry is a simple and easy recipe made with ivy gourd, spices and herbs. This dondakaya fry recipe is best served as a side dish with chapatis or with curd rice and dal-rice. It is also a no onion no garlic recipe.

Kovakkai Fry | Dondakaya Fry

ivy gourd (or 2.5 cups sliced ivy gourd (tindora

oil ((sunflower, peanut or mustard oil))

turmeric powder ((ground turmeric))

½ teaspoon kashmiri red chilli powder

fennel powder

cumin powder ((ground cumin))

Coriander Powder ((ground coriander))

asafoetida ((hing))

¼ teaspoon Garam Masala

mango powder ((amchur powder))

First rinse 250 grams ivy gourds (tindora or tendli or dondakaya) very well in water. Drain the excess water. 

Then thinly slice of the top and bottom ends and discard them. Slice the ivy gourds vertically in four parts. You will need 2.5 cups sliced ivy gourds.

Heat 2 tablespoons oil in a heavy and thick bottomed kadai.&nbsp;

An iron kadai works best for this recipe. If using mustard oil, then let it come to its smoking point and then add tendli.

Keep the flame to a low and add the sliced tindora (ivy gourds).

Mix very well with the oil.

On a low flame begin to cook the tindora. Keep stirring after 3 to 4 minutes.

Saute till the tindora is half done. You will see the edges getting light golden on the tindora when they are half cooked.

Now add the spice powders - ¼ teaspoon turmeric powder, ½ teaspoon kashmiri red chilli powder, ½ teaspoon fennel powder, ½ teaspoon cumin powder, ½ teaspoon coriander powder and&nbsp;1 pinch asafoetida (hing).

Mix the spices very well with the tindora.

Add salt as per taste.

Mix well and continue to saute on a low flame till the tindora becomes golden, slightly crisp and is cooked well. Stir after 3 to 4 minutes.

Saute till the dondakaya is cooked well.

Lastly add ¼ teaspoon garam masala powder, ½ teaspoon dry mango powder and 2 tablespoons chopped coriander leaves

Mix well and switch off the heat.

Serve Kovakkai Fry hot or warm with chapatis or with dal-rice or curd rice or sambar-rice or rasam-rice.
