Caramel Pecan Upside-Down Cake

Preheat the oven to 325°F. &nbsp;Heat a well-seasoned 10.25-inch cast iron skillet over medium-low heat. &nbsp;Add 1/2 cup of the butter, brown sugar, corn syrup, salt, and pecans. &nbsp;Cook, stirring frequently, until the butter has melted and the sugar has dissolved. &nbsp;Remove from the heat and set aside. &nbsp;

Melt the remaining 1/2 cup of butter. &nbsp;Add it to a large bowl with the cake mix, eggs, and water. &nbsp;Beat for about 2 minutes to combine. &nbsp;Pour the mixture evenly over the caramel sauce and pecans in the skillet. &nbsp;Bake for45 to 50 minutes or until the cake is set or a toothpick inserted in the center comes out clean. &nbsp;(If you're unsure about your skillet size, it might be a good idea to place the skillet on a rimmed baking sheet or pizza pan to catch any drips that might run over in the oven.) &nbsp;

Allow the cake to cool for about 10 minutes then place and large plate or platter over the skillet and carefully flip it over to turn the cake out onto the plate. &nbsp;(A dish towel works great to assist in this as the pan may still be hot.) &nbsp;Scoop any pecans and sauce remaining in the skillet over the cake. &nbsp;Serve warm. &nbsp;

½ kgs Beef, use topside beef (Main)

Place a dash of oil in a large saucepan over a high heat and brown the piece of meat on all sides. Set aside on a plate.

Lower the heat, add the onion and cook until lightly golden, about 10 minutes.

Return the meat to the saucepan, add onion, water, vinegar, Worcestershire sauce, beef stock powder and bouquet garni and cover with the saucepan lid.

Cook on a very low simmer for 5-6 hours until the meat is tender and falling apart.

You can also cook this in the oven at 150C, or in a slow cooker.

Remove the meat from the saucepan and keep warm. You should be able to pull the meat apart with 2 forks to serve.

Thicken the juices with a paste made from equal quantities of soft butter and flour. Whisk into the juices.

Serve with plenty of mashed potato, vegetables and the meat sauce.

To a large mixing bowl, add flour, baking powder, baking soda, salt, and sugar. Mix until thoroughly combined.

Create a small well in the middle of the dry ingredients. Add milk, half of the reserved pineapple juice, melted butter, and vanilla extract. Whisk until ingredients combine to form a lumpy batter. Set aside while you make the pineapple syrup.

Add the remaining butter to small sauce pan over medium heat. Once butter is melted, add brown sugar, the remaining pineapple juice, and rum (optional).

Bring ingredients to a boil allowing for the sugar to melt and caramelize. Once mixture is smooth and has the consistency of syrup, remove from heat and set aside.

Melt a small amount of butter in a frying pan over medium heat and add a slice of pineapple. Cook pineapple ring until lightly caramelized on one side, about 2 minutes, before flipping it.

Once flipped, fill the core of the pineapple with 1-2 maraschino cherries before pouring about ¼ cup (30 grams) of the pancake batter over.

Cook until the edges start to set and the top begins to bubble, about 2 minutes, before carefully flipping the pancake--revealing the pineapple underneath. Cook for an additional 90 seconds to 2 minutes until the pancake is cooked through.

Store cooked pancakes in a 200˚F (90˚C) oven until ready to serve.

Serve pancakes warm with reserved pineapple syrup.

Caramel Apple Upside-Down Cake

(2 sticks) butter, divided

(15.25-ounce) box yellow or butter flavored cake mix

Preheat the oven to 325° F. Add 1/2 cup (1 stick) of the butter and the brown sugar to a well-seasoned, medium (about 10.25") cast-iron skillet. Place the skillet over medium heat, and stir until the butter is melted and the mixture is combined. Remove from the heat.

Melt the remaining 1/2 cup (1 stick) butter in a small bowl in the microwave. In a large bowl combine the cake mix, eggs, melted butter and 1 cup water. Mix well.

Place the sliced apples in the skillet on top of the caramel mixture arranging them in whatever fashion you like. Pour the cake batter on top of the apples. Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Immediately cover the skillet with a platter and invert to remove the cake.

Strawberry Upside-Down Cake

(15.25-ounce) yellow or butter cake mix

Preheat the oven to 325°F. &nbsp;Wash, core, and slice each of the strawberries in half.

In a well-seasoned, 10.5-inch cast iron skillet, heat 1/2 cup butter and the brown sugar over medium heat until butter is melted; stirring constantly. Remove from heat.

Arrange the strawberries in the skillet, carefully pressing them into the caramel mixture. &nbsp;

Melt the remaining 1/2 cup butter and add it to a large bowl with the cake mix, water, and eggs. Mix well.  

Pour the cake batter over the strawberries. &nbsp;

Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.

Immediately cover pan with a platter and invert. Serve warm, topped with whipped cream, if desired.  

Followed instructions and put in 10.5 iron skillet.  Cake ran out all over oven.  What a mess!!!
