The Scofflaw - A Rye Cocktail

This orange juice and bourbon cocktail is a classic for a reason. Full of flavor, this one is a great sipper.

The Scofflaw Cocktail

This is an elegant, velvety take on a traditional skillet-supper, perfect with a mound of fluffy white rice. Cooking this fricassee with the aperitif known as dry vermouth instead of the more traditional white wine results in a slightly sweeter and more aromatic sauce than you would ordinarily get. (White vermouth is composed of, among other things, white wine plus a bit of sugar, herbs and plants and, at times, the bark of trees.) But white wine will work as well.

Chicken Fricassee With Vermouth

three-and-one-half-pound, ready-to-cook chicken,

Salt,

pepper

butter

onion

garlic,

flour

dry white vermouth

chicken broth

bay leaf

thyme

carrots

leeks

heavy cream

Sprinkle the chicken with salt and pepper to taste.

Heat the butter in a skillet and add the chicken pieces skin side down. Cook over moderate heat about one minute without browning.

Scatter the onion over all and cook 30 seconds. Add the garlic and stir it around. Cook the chicken about four minutes, turning the pieces often in the butter.

Sprinkle the flour over all, turning the pieces so that they are evenly coated. Add the vermouth, chicken broth, bay leaf and thyme. Cover and cook over moderate heat about 20 minutes.

Meanwhile, bring two batches of water to the boil for the carrots and leeks. Drop the carrots into one batch, the leeks in the other. Let the carrots simmer about one minute and drain. Let the leeks simmer about four minutes.

When the chicken has cooked for a total of 30 minutes (start to finish), add the carrots, leeks and cream. Let simmer about two minutes. Serve with rice.

A classic gin cocktail using sweet and dry vermouth

The Perfect Negroni

sweet vermouth

Campari

orange (or lemon) twists (I didn't have orange but that would be my choice.)

Combine all the ingredients in a measuring glass or divide the ingredients between two glasses.

Fill two double old-fashioned glasses with ice, preferably one large cube.

Pour  the cocktail over the ice in each glass and garnish with a twist.

Alternately, fill the measuring glass with ice, stir till chilled and pour divide between two coups and garnish with a twist.

Combine all the liquids in a mixing glass with ice and stir till chilled. Strain into an old fashioned glass with one big rock or into a chilled coup. Garnish with lemon twist.

This variation on the classic Negroni Sbagliato uses the clear bitter liqueur Bitter Bianco in place of the vermillion Campari.

Bianco Negroni Sbagliato

oz Luxardo Bitter Bianco

oz bianco

oz prosecco

tsp citric acid solution* (optional)

Fill a tall glass with ice. Add Bitter Bianco, vermouth, citric acid solution, and stir.

Top with prosecco and garnish with an orange slice, red currants, and a yellow spray rose, if desired.

This crisp, herbal cocktail is perfect for autumn with white rum, green Chartreuse, and a homemade apple cinnamon syrup.

First Frost (Rum and Green Chartreuse Cocktail)

1½ oz white rum ((I used Cruzan Aged White Rum))

oz lime juice

½ oz Green Chartreuse

½ oz apple cinnamon syrup* ((syrup recipe below))

Combine all ingredients in a cocktail shaker and fill it 3/4 with ice.

Shake until chilled, then strain the liquid into a coupe glass.

Garnish with an apple rose or apple fan.
