Lemon Earthquake Cake is a dessert that starts with a layer of coconut and macadamia nuts, followed by a lemon cake and cream cheese swirl, all topped and baked with white chocolate chips.

Preheat oven and prepare baking dish.

Preheat oven to 350° and grease a 9x13-inch pan with cooking spray.

Make the cake batter.

Prepare the cake batter according to package directions.

Layer the bottom of pan with coconut and macadamia, and then cake mixture.

Sprinkle the coconut and macadamia nuts onto the bottom of the prepared pan.

Spread your cake batter over the top. Set aside.

Mix together cream cheese mixture.

Meanwhile, in a large bowl, combine the cream cheese, butter, confectioners&#039; sugar, vanilla, and salt.

Spread cream cheese mixture over cake batter,

Beat with a mixer until combined. Dollop the mixture over the cake and use a knife to marble.

Sprinkle with white chocolate chips and bake.

Sprinkle white chocolate chips on top and bake for about 55-60 minutes, or until the center is set.

Serve warm.

Preheat oven to 350° F. Grease a deep 9 x 13-inch baking dish (preferably at least 2 inches deep or more). If you’re not sure that your pan is deep enough, you can place the dish on top of a rimmed baking sheet to catch any accidental overflow from a shallow dish.

Spread coconut and pecans in the bottom of the prepared dish.

Prepare the cake mix according to package instructions. Pour the cake batter over the coconut and pecans.

In a separate bowl, use an electric mixer to cream together butter, cream cheese and vanilla extract. Gradually add the confectioner’s sugar and mix until incorporated.

Dollop the cream cheese mixture on top of the cake batter. Use a knife to swirl the cream cheese mixture around. Sprinkle the chocolate chips on top.

Bake for about 40-45 minutes, or until set. A toothpick inserted in the center of the cake will not come out clean, since the inside will still be a little bit gooey. Cool, slice into squares, and serve!

Preheat the oven to 350 degrees F.

Lightly spray a 9 x 13 inch pan with non-stick cooking spray.

Sprinkle the coconut, chocolate chips, and pecans on the bottom of the pan.

Mix the german chocolate cake mix with the oil, eggs, and water using a spatula or hand mixer on low.

Pour the cake mix on top of the coconut/chocolate chip/pecan layer.

In a saucepan, melt the butter and cream cheese.

Using a spatula or hand mixer on low, beat in 1 pound of powdered sugar until it's smooth to the butter/cream cheese.

Spread this mixture on top of the uncooked german chocolate cake in the pan, and swirl into the cake mix using a knife.

Bake for 35-45 minutes. It is done when it doesn't wobble in the pan if you shake it. The toothpick test shouldn't work because the cake should be more gooey in nature.

Chocolate chips, pecans, coconut and german chocolate cake make a delicious earthquake cake! I'm not really sure how this cake got its name, but it's rich with german chocolate flavor,  pecans, coconut, and the secret ingredient - a powdered sugar, cream cheese, and butter swirl layer.

Your family will beg for more of this earthquake cake, so make sure to put it in your regular rotation!

Spray a 13x9 pan with cooking spray. Scatter pecans and coconut evenly into pan. Prepare cake batter per manufacturer’s instructions and pour over pecans and coconut.

Combine melted butter and cream cheese in a medium-sized bowl then beat with an electric mixer until smooth. Add powdered sugar, one cup at a time, and beat on low until smooth and creamy.

Drop heaping tablespoons of the cream cheese mixture evenly onto cake batter. Sprinkle cake with chocolate chips. Bake at 350 degrees for 40-45 minutes or until set.

Preheat the oven to 325ºF and grease a 9x13 glass or ceramic baking pan. Sprinkle the bottom with the shredded coconut and the pecans.

In a large bowl, whisk together the almond flour, sweetener, cocoa powder, protein powder, baking powder, and salt.

Stir in the eggs, 6 tablespoons of the melted butter, coffee or water, and vanilla extract until well combined. Spread over the coconut and pecans.

In another large bowl, beat the cream cheese with the remaining 8 tablespoons of melted butter until smooth. Beat in the powdered sweetener.

Dollop this mixture over the cake mixture by the spoonful. Use a knife to swirl into the cake mixture, scraping all the way to the bottom in some places to mix up the coconut and pecans.

Sprinkle with the chocolate chips. Bake for about 35 to 45 minutes, until cake is mostly set through but still a little soft and jiggly in the center. Err on the side of underdone, rather than over-baking it.

Remove and let cool at least 20 minutes before serving.

One of my most favorite keto dessert recipes... it's soooooo good!! I've made this one alot!!

This one came out a bit dry and crumbly. I think because I didn’t have the metric numbers and instead of weighing everything, I went with “one cup of…” and it was too much. I truly appreciate when metric weights are included and they weren’t listed on this one. I’m brand new to keto baking and am realizing just how important precision is with ingredients.
