These delicious bunny butt cupcakes are the perfect Easter treat!

Bunny Butt Cupcakes

all-purpose flour (213 grams)

sugar (228 grams)

tsp baking soda (1 grams, heaping)

tsp baking powder (4 grams)

unsalted butter (176 grams, room temp)

eggs

tsps vanilla extract (15 milliliters)

sour cream (133 grams)

whole milk (113 grams)

unsalted butter (228 grams,room temp)

confectioners' sugar (463 gramsg)

tbsp whole milk (30 milliliters)

green food coloring

tsp vanilla extract (5 milliliters)

fondant (approximately)

White sanding sugar

pink food coloring

Sift the dry ingredients (including sugar) together in a large bowl.

Mix the wet ingredients together in a medium bowl.

Add the wet to the dry and mix until just combined.&nbsp;

Divide the mixture into cupcake papers.&nbsp;

Bake at 340F for about 20 minutes or until the centers are springy to the touch. Baking time depends on the size of your cupcakes.&nbsp;

For the Cake:

Beat the butter until light and fluffy, add the sugar a cup at a time and beat well. Mix in milk until desired consistency is reached. Add vanilla and green food coloring.&nbsp;

For the Buttercream:

Use a spatula to add a layer of grass to the cupcakes. &nbsp;Transfer the rest of the buttercream to a piping bag fitted with a 133 tip.

Roll fondant into small balls. Wet and roll in sanding sugar.

Press some fondant into a rounded glass or small bowl to form the body.&nbsp;

Roll some fondant out to a thin sheet. Use the back of a piping tip to cut circles for the feet. Roll the circles out a bit to form ovals. Mix the pink food coloring with a small amount of fondant. Roll out and use 2 small round piping tips to create the pads for the feet.&nbsp;

Assemble by brushing a small amount of water where the fondant needs to be joined.&nbsp;

Pipe grass around the edge of the cupcake.&nbsp;Place the bunny.&nbsp;Fill in with the grass tip.&nbsp;

These Easter bunny cupcakes might just be the perfect treat for spring. Moist vanilla cupcakes with easy to pipe buttercream grass topped with cute little bunny butts, which are easier than you might think! Aren’t they cute?

When I bake these I use normal cupcake papers then remove them after they’re all baked and cooled and pop them into these more decorative paper cups.  Less, if any, staining and so much easier to calculate the fill amount and bake times. You can also leave those papers on and just plop them in.

Easter Bunny Cupcakes

These mini Bunny Butt Cupcakes are a cute Easter cupcake idea made with buttercream, marshmallows and sprinkles. Perfect for Easter dessert tables and easy enough for beginners.

Mini cupcakes

Batch of my basic buttercream

Cup Dessicated coconut

Cup candy melts (white)

Cup Pink candy melts

Tbsp Vegetable shortening

Step 1

Make the cupcake batter according to your recipe instructions. Line a mini cupcake pan with cupcake liners and fill each liner about halfway with batter. To create the rounded butt shape, tuck a small foil ball between the liner and the tin so the liner curves in slightly. Make sure you only fill them half full so the cupcakes rise evenly and hold their shape as they bake.

Step 2

Bake the cupcakes according to the recipe instructions and allow them to cool completely before decorating.

Step 3

Make a batch of buttercream and transfer it to a piping bag fitted with a large round piping tip (1A)  If needed, add a small amount of white food gel to keep the buttercream bright white. Pour desiccated coconut into a shallow bowl so it is ready for coating the cupcakes.

Step 4

Use the white buttercream to pipe the bunny butt shapes onto the cupcakes. You are essentially creating an upside-down heart shape. Starting on the bottom left side of the cupcake, squeeze a large dot of buttercream and pull the piping tip up and inward, releasing the pressure as you reach the top.

Step 5

Repeat the process on the right side of the cupcake, piping another large dot of buttercream and pulling the piping tip up and inward so the two curves meet neatly in the centre. This creates the rounded bunny butt shape. Once both sections are piped, you should see the soft upside-down heart shape that forms the bunny’s body.

Step 6

Pour the desiccated coconut into a shallow bowl. Gently press the buttercream side of each cupcake into the coconut, just enough to coat the surface without flattening or losing the shape of the bunny butt.

Step 7

This is the look you’re aiming for. The bunny butts should be fully coated in coconut to create a soft, fluffy texture. If any small spots are missed, use a spoon to gently sprinkle extra coconut over the buttercream and lightly press it into place.

Step 8

Use a cocktail stick to mark the centre line of the bunny butt. Gently press a straight indent down the middle to define the shape. If your piping already created a clean line, you can skip this step. &nbsp;

Step 9

Melt a small amount of pink candy melts in the microwave using short bursts on low heat, stirring between each burst until smooth. Transfer the melted pink candy melts to a small piping bag and cut off the tip.

Step 10

Place the candy melt buttons onto a sheet of baking paper. Pipe one larger dot of pink candy melt in the centre of each button to create the paw pad, then use the end of a brush or a wooden skewer to add three small dots above. Allow the candy melts to set completely before attaching them to the cupcakes.

Step 11

Attach the bunny feet to the base of the buttercream dome. I used a small dab of melted white chocolate to stick them in place, as they will not attach easily to the coconut. Hold each foot gently for a few seconds until it sets.

Step 12

Make a small indent in the buttercream first, then add a small white sprinkle to the top of the cupcake to create the bunny tail. Use a tiny dab of melted white chocolate to attach it so it stays in place on the coconut.

The Results! Well done.

Your mini bunny butt cupcakes are ready to serve. Display them on a plate of crushed Oreos to look like soil and add a little coconut coloured green for grass if you like. It creates a fun Easter scene and makes the bunny butts look like they are burrowing into the ground.
