225 grams/8 ounces potatoes, cubed

vegetable stock

150 milliliters/5fl oz double cream or crème fraîche

salt and black pepper

These little bubble and squeak cakes fancy up leftover roast or mashed potatoes and any uneaten greens. Go even fancier with candied shallots give it a lovely sweetness.

tbsp caster sugar

200 milliliters/7fl oz red wine

125 milliliters/4fl oz port

crème de cassis

600 milliliters/1 pint beef stock

bay leaf

lemon, zest only

thyme

olive oil

leeks, washed, sliced

sea salt flakes and black pepper

Pan haggerty is a traditional one-pot wonder or bacon, potatoes and carrots, perfect for warming you up on a cold evening. Or serve as a side with some leftover roast chicken.

500 milliliters/17½fl oz chicken stock

150 grams/5 ounces cheddar, grated

milk chocolate, chopped (or dark chocolate)

chocolate ice cream

vanilla ice cream

granulated nuts (to serve)

coconut oil

Melt chocolate and coconut oil together in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until melted and smooth. Cool for 10 minutes, but do not refrigerate.

Arrange banana pieces in four serving dishes. Top each with chocolate and vanilla ice-cream. Drizzle over chocolate sauce and finish with fresh raspberries and nuts to serve.
