Cheesy leeks are great as a side dish for roast chicken – especially if you are serving vegetarians as well as meat eaters. This recipe makes enough for a generous supper for two or a vegetable accompaniment for four.

Traditionally this French dish is sautéed on the hob, but if you’re serving as a Sunday roast accompaniment all that last-minute fuss can be a distraction. This is finished in the oven instead. This dish also makes for a simple vegetarian supper served with some sharply dressed salad leaves.

Heat oven to 425°F. On two large rimmed baking sheets, toss carrots with 2 tablespoon&nbsp;oil and 1/2&nbsp;teaspoon&nbsp;each salt and pepper. Nestle orange half, cut side down, onto 1 baking sheet and roast both until carrots are golden brown and tender, 25 to 30 minutes. Transfer to platter.&nbsp;

Heat olive oil in a large cast iron or heavy skillet over high heat. Add snap peas and cook, untouched to char, 2-3 minutes. Stir and cook until the snap peas are tender-crisp but still green, another 2 to 3 minutes, stirring.

A favorite, great flavor-the seasonings are perfect, we liked it with or without the feta. Made a nice side for the skinnytaste air fryer fish with almond crumb topping from first air fryer book--plus some steamed green peas. Will make these sugar snap peas a lot.

This week, try Lightened Scalloped Potatoes - a hearty dish filled with garlic, onion, thyme, and savory cheesy flavors. With 12 servings, it's perfect for a crowd!

Lightened Scalloped Potatoes

lb yukon gold potatoes

tbsp arrowroot powder (or 1/2 tbsp cornstarch)

Preheat oven to 400 and spray a 7&#215;11 dish with nonstick spray. a 9&#215;13 will also work, it will just be thinner.

Slice potatoes thin, about 1/8th inch thick. Layer half of the potatoes on the bottom of the pan, in overlapping layers.

In a sauce pan, turn on medium high heat and add butter. Once melted, add in onion and saute for a few minutes until slightly softened. Add in garlic, thyme, salt, pepper, and cayenne and stir until combined well.

Whisk in milk and arrowroot powder, and bring to low simmer for a few minutes, stirring occasionally. The mixture should begin to thicken. Turn off heat.

Add in 1/3 of the cheddar cheese to the milk and stir to melt.

Pour half of the cheese sauce over the first half of the potatoes and spread out with spoon.

Add the rest of the potatoes on top in a stacked pattern. Pour the rest of the cheese sauce on top of the potatoes, and spread evenly with spoon.

Top with remaining cheese and bake for 40-45 minutes or until golden brown and bubbly.

Normally I’d be intimidated by this type of recipe but you made it so simple to make and it turns out absolutely delicious! A perfect side dish full of flavor and comfort.
