Crispy Rice Cakes with Spicy Peanut Sauce

servings tteokbokki (rice cakes) (about 20-25 pieces)

cooking oil

green onions (for garnish)

sesame seeds (for garnish)

tbsp peanut butter

tbsp chili oil

tbsp sugar

tbsp light soy sauce

tbsp rice vinegar/apple cider vinegar

water

In a pan over medium heat, pour in enough oil to cover the surface of the pan.

If your tteokbokki/rice cakes are frozen, soak it in hot water for 5 minutes. If it&#39;s not frozen, you can proceed with the next step.

Once hot enough, add the tteokbokki/rice cakes and leave it to cook until the bottom turns golden brown. Flip/stir occasionally until both sides turn golden brown (about 10 minutes).

Add all the ingredients for the sauce in a bowl and mix well. Add more water if you want a looser sauce.

Transfer the tteokbokki/rice cakes to a serving plate and drizzle the sauce on top or serve on the side. Add more chili oil on top and garnish with green onions and sesame seeds. Enjoy!

Easy Tasty Scallion Oil Noodles

neutral oil

sugar

1.5 tbsp dark soy sauce (see notes)

scallions (green onions)

tsp minced garlic

wheat noodles

Cut off the roots and cut scallions into thirds. Cut each thirds thinly or tear it with you hands. Mince garlic and set aside.

In a pot/pan, add neutral oil and scallions. Cook over medium heat for 10 minutes or until the scallion is cooked to your desired doneness, occasionally stirring.

Turn off heat and add the minced garlic and stir. Remove the scallions from the oil before adding sugar, dark soy sauce and light soy sauce. Stir well.

Meanwhile, cook noodles according to instructions. Once cooked, transfer the noodles straight from the pot to the scallion oil mixture. Mix well until well combined. Leave the noodles in the pan for a few minutes to soak up all the sauce.

Serve with the cooked scallions on top or mixed in the noodles. Enjoy!

Boil noodles until cooked and drain. Set aside for later.

In a bowl, add garlic, green onions, gochugaru and sugar.

Heat up the neutral oil on high in a saucepan until it&#39;s smoking (1-2 minutes). Pour the oil into the bowl and stir. Add light soy sauce, oyster sauce and rice vinegar and stir until well combined.

Pour in hot water into the same bowl. Add miso paste and stir until dissolves (see notes).

Add noodles and toppings of your choice (I used egg, green onions, chili oil and sesame seed). Enjoy!
