Sheet Pan Chicken and Asparagus will save the day (and dinner) with its easy-to-prepare instructions, simple ingredients, and delightful flavor that the whole family is sure to love! 

Sheet Pan Chicken and Asparagus

chicken breasts (pounded to even 1-inch thickness)

olive oil (divided)

salt (or

cracked black peppe (to taste,

garlic powder

lemon

asparagus (ends trimmed)

parmesan cheese

Preheat oven to 375 degrees and lightly grease a rimmed baking sheet.

Stir together salt, pepper, garlic powder, Italian seasoning blend.

Arrange chicken and asparagus in a single layer on the baking sheet.

Drizzle olive oil over the asparagus and the chicken. Toss in the oil to coat.

Season chicken and asparagus all over with the herb mixture.

Squeeze fresh lemon juice over the chicken and asparagus. (For added flavor and visual appeal you can layer thin lemon slices between the asparagus spears)  Sprinkle parmesan over the asparagus.

Bake for 15-20 minutes until asparagus is tender and chicken is cooked through. Serve immediately.

How to Blanch Asparagus

Asparagus, (tough ends trimmed (preferably baby asparagus if available))

Homemade Mediterranean-Style Salsa,

In a cooking pot or large saucepan, bring 8 cups of water, seasoned with 2 tablespoons of kosher salt, to a boil.  Have a large bowl of ice water ready next to it (this is an ice bath for the blanched asparagus).

When water comes to a rolling boil, add the prepared asparagus. Boil until tender, 3 to 4 minutes (depending on thickness). Remove with tongs, or drain in a colander, and immediately transfer to the bowl of ice water for 1 minute to stop the cooking process. Drain; set aside to cool down a bit (or if you prefer to serve it as a salad, chill in the fridge for a bit).

When ready to serve, arrange the asparagus on a serving platter. Season with salt and pepper. Add a drizzle of good extra virgin olive oil and lemon zest.

This potato salad hits all the notes. Softly roasted baby potatoes, asparagus, pistachios and eggs. All tossed together in a mustard tahini dressing with just a hint of smokiness from za’atar.

Za'atar Roasted Potato and Asparagus Salad

baby potatoes

asparagus

olive oil

lemon juice

salt (to taste)

black pepper (to taste)

tsp za'atar

pistachios

½ tsp chili flakes

eggs

tsp yellow mustard

garlic (grated

tsp tahini

apple cider vinegar

tsp honey

On a large rimmed baking sheet, combine the potatoes, olive oil and a pinch of salt and pepper. Sprinkle with lemon juice, toss well to evenly coat. Transfer to the oven and roast for 20-25 minutes, it depends on how big your potatoes are.

Remove the potatoes from the oven and add asparagus, za’atar, chili, pistachios. Toss well to coat evenly. Transfer to the oven and roast for 10-15 minutes or until the asparagus are tender.

In the meantime, combine the ingredients for the dressing in a large bowl.

To assemble the salad, transfer the hot veggies to the bowl with the dressing. Stir until the vegetables are fully coated. Add eggs, season with salt and pepper and serve warm or at room temperature. Enjoy!
