The perfect loaded baked potato, fluffy and creamy on the inside with crispy skin and packed with flavor from toppings like Greek Tzatziki sauce, olives, tomatoes, and feta!

Mediterranean Loaded Baked Potato Recipe

russet potatoes

Extra virgin olive oil

Kosher salt

Black pepper

oregano

Greek Tzatziki Sauce (I use this recipe)

Wash and scrub the potatoes clean. Dry completely.

Poke holes all over the potato using a fork – about 5 to 6 times. Rub the potatoes with olive oil and sprinkle with kosher salt, and prick them in several places with the tines of a fork. Arrange the potatoes on a baking sheet, and bake for 1 hour or until potatoes are super soft and fork-tender and the skin is nice and crisp (can take up to 75 minutes).

While the potatoes are baking, make the Tzatziki sauce according to this recipe, if using, and prepare the remaining toppings.

When the potatoes are ready, remove from the oven and set aside to rest for 5 minutes. Slice each open wide, and scoop the potato flesh out into a bowl. Add 1 tbsp olive oil, salt and pepper, and dried oregano. Mash with a fork.

Now, scoop the mashed potatoes back into the skins. Using your hands, reshape the potatoes if needed, then top with the Tzatziki sauce and the remaining Mediterranean toppings to your liking. Enjoy!

Jacket Potato in the Air Fryer

Jacket Potato (about 290 grams each (10.2 oz))

Prick each potato all over with a fork about four times.

Microwave

Place on a microwaveable plate, cook on high, turn once halfway through; Time varies depending on how many you are cooking at once, microwave power (use high) and the size of your potatoes.Times are based on large 290 gram (10.2 oz) potatoes1 Potato - 8 minutes2 Potatoes - 10 minutes3 Potatoes - 12 minutes4 Potatoes -14 minutes

Use a knife to check they are soft all the way through. Cook in 1-minute intervals from now on until soft.

Use spray oil to coat the skin. Or pour a small amount of oil on a plate and roll potato skin in the oil.Sprinkle with salt.

Crispy

Transfer potatoes to the air fryer, cook at 200°C / 400°F for 8 minutes. You can cook for longer if you want crispier skin.

Remove and serve with your chosen toppings.

Microwave &amp; Air Fryer Method (Quickest Method)

Follow the instructions above, skipping step 2 (microwave).Cook at 200°C / 400°F for 45 minutes. Turn once halfway through.

To test that they&#39;re done, insert a sharp knife into the centre of the potato; if no resistance is met, they&#39;re ready to serve. If still firm inside, continue cooking in 2-minute intervals.Serve with desired toppings.

Preheat convection oven to 375°F.

Clean potatoes by scrubbing them under running water. Pat dry.

Poke potatoes 6-8 times with a fork to vent steam.

Rub potatoes with oil.

Rub potatoes with salt, using your hands to coat the potato.

Place potatoes in the middle rack of the oven.

Bake for 45-50 minutes or until a fork will insert easily into the center of the potato. If it is still a little firm, cook for longer, checking every 5 minutes.

Slice the potato open down the middle. Fluff the cooked potato with a fork then top with shredded cheese and toppings. Serve while warm.

Instant Pot Baked Potatoes

Add water to the inner pot of the Instant Pot.

Add in the steaming rack. Prick the potatoes with a fork and then place them on the rack.

Cover and seal the Instant Pot

Select the steam programme, press the 'adjust' button until you get 12 mins and let cook till done.

Allow the Instant Pot pressure to reduce naturally, this may take about 15 mins.

Open, remove the potatoes and serve.

We frequently have baked potatoes for dinner, served with a salad they are the perfect light dinner.  This mediterranean version has all the flavors we love!

These loaded baked potatoes will be a tasty and healthy alternative to the usual (broccoli, cheese, bacon, sour cream), and I'll be trying this for Thursday dinner.

One thing I've found that helps speed up the baking time without sacrificing quality (crispy skin and fluffy flesh) is to start them in the microwave and finish them in the oven. I'll cook them in the microwave for about 4-5 minutes, flipping halfway, which jump-starts the cheating process, and then finish for about 1/2 hour in a 375 degree oven.
