easy banana pancakes

A very simple and easy gluten-free recipe for fluffy vegan banana pancakes made with white rice, buckwheat, and tigernut flour.

Fluffy Vegan Banana Pancakes

70 g white rice flour

g tigernut flour

buckwheat flour

g tapioca flour

agave

150 ml rice milk

banana (ripe) (approx. 100 g)

baking powder

baking soda

Put all the dry ingredients in a medium-sized bowl.

Mix banana and 150 ml rice milk in the blender until smooth.

Add the banana mixture and agave syrup to the bowl with dry ingredients and mix well. Adjust sweetness if needed.

Brush the pan with coconut oil and preheat it under medium-low heat.

Pour the batter into a circle (use 1 heaped tablespoon for each pancake).

When the pancake starts bubbling a bit and the bottom is lightly browned, flip it over and cook briefly on the other side.

Top with blueberries.

Makes 12 - 13 pancakes.

Banana Protein Pancakes

oats

tbsp chia seeds

eggs

egg whites

banana*

tsp vanilla extract

tsp baking powder

cinnamon

tsp salt

tbsp vanilla protein powder (optional)

In a blender, mix together all of the ingredients until combined and smooth.

Preheat griddle to medium high. Spray with cooking spray. Using a tablespoon, scoop pancake mixture on the pan so it forms a medium circle (use about 2 heaping tablespoons for each pancake).

Cook for 4-5 minutes on the first side or until edges start to harden and bubbles start to form on surface. Flip and cook for an additional 1-2 minutes on the other side.

Top with sliced banana, peanut butter, chocolate chips, coconut and maple syrup, if desired.

This easy fluffy banana pancakes recipe yields generous light and airy pancakes, loaded with banana bread flavor. With just a handful of pantry staples and ripe bananas, you can make your dream breakfast come true as often as you want!

Easy Fluffy Banana Pancakes

(180 grams) all-purpose flour

Tablespoons (25 grams) sugar (optional)

cinnamon (optional)

salt

bananas

(240 ml) milk

(60 ml) canola oil

In a medium bowl, whisk together all-purpose flour, sugar*, baking powder, cinnamon if using, and salt. Set aside.

In a separate bowl, mash the bananas with a fork (it&#8217;s ok if small chunks remain). Add the eggs and pour in the milk and canola oil, mixing until just combined.

Pour the dry ingredients into the wet ingredients, and mix until just combined (do not overmix). Let sit for a couple of minutes.

Heat a large skillet or griddle over medium heat. For each pancake, spoon about 1/4 cup of the batter onto the skillet. Cook until bubbles form over the surface of the pancakes, then flip with a thin spatula, and cook 1 or 2 additional minutes.

Serve warm, with maple syrup drizzled on top and extra toppings** of your choice.

I thought I'd try these pancakes although I've tried many recipes before and they are always a disaster, so I didn't hold it much hope for these.........
However they turned out amazingly good, I even threw a few blueberries in...... They were delicious, and fluffy, and a lovely banana flavour, which I craved. 
I am so proud that I can now make pancakes, thank you for this super easy, tasty recipe.
Ps.. Can you keep the batter ready made in the fridge??

I love this recipe! Is so easy to make,I keep making it. My very picky two year old loves it.Sometimes I add blueberries and drop the cinnamon,add coconut oil or butter instead of or not,I even tried to add peanut butter to it(not a very good result of my experiment:))I make it the night before and I heat it up for lunch or breakfast. Thank you so much for sharing this with me and my family

Best pancakes ever! I normally don’t write feedback but this is an excellent recipe and your tips for success are invaluable.
I didn’t use sugar, my bananas were very ripe ☺️ Also substituted the canola oil for coconut oil and half the flour for spelt flour.
