Choose your own dinner adventure with this beef bulgogi! While the beef marinates, whip up pickled daikon radish and gochujang mayo for some added crunch and creamy spice. The beef is cooked in an Instant Pot until it’s super tender, then broiled for that signature char. How you serve the beef is up to you--we like it in lettuce wraps or over rice. lb beef chuck roast,

½ medium white onion, thinly sliced

gochujang

Marinate the bulgogi: In a large bowl, combine the beef, onion, gochujang, Asian pear, ginger, garlic, soy sauce, sesame oil, sesame seeds, and sugar. Toss until the beef is well coated. Cover the bowl with plastic wrap and transfer to the refrigerator to marinate for at least 2 hours, up to 6 hours.

While the beef is marinating, make the pickled daikon: In a large bowl, toss the daikon radish and salt together until fully coated. Let sit at room temperature for 15 minutes, until the salt has dissolved and the radish has released most of its liquid. Transfer the daikon to a mesh strainer and rinse thoroughly with cold water.

Return the drained daikon to the bowl and add the hot water, rice vinegar, and sugar and stir until the sugar is fully dissolved. Cover with plastic wrap and let sit at room temperature for at least 2 hours. The pickles will keep in an airtight container in the refrigerator for up to 1 week.

Make the gochujang mayo: In a medium bowl, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, and salt. Set aside until ready to use. The mayo will keep in an airtight container in the refrigerator for up to 1 week.

Transfer the beef and its marinade to an Instant Pot. Close the lid to seal and cook on high pressure for 20 minutes. Once the 20 minutes has elapsed, allow to naturally release for 15 minutes. Turn the steam valve to venting to release the remaining pressure before opening.

Arrange an oven rack at the top third of the oven. Turn on the broiler.

Using a slotted spoon, transfer the beef to a baking sheet and place under the broiler for 4–5 minutes, until slightly charred.

Serve the beef immediately with the pickled daikon, gochujang mayo, and toppings as desired.

How to store

Store leftover ground beef from any of these easy ground beef recipes in an airtight container and place in the refrigerator for up to 3 days. Most of these recipes are also freezer-friendly and can also be stored in the freezer for up to 3 months.

How to reheat

Depending on the recipe, you can reheat in the air fryer at 300F for 5-10 minutes, in the oven at 300F for 10 minutes, or on the stove over medium heat until fully warmed through. To reheat from frozen, let it thaw first overnight in the refrigerator or for a few hours at room temperature, and then reheat.

Sometimes called &#39;Allspice Beef Stew,&#39; this traditional Swedish Beef Stew (Kalops) is an excellent addition to your comfort-food collection.  Minimal ingredients and prepared only on the stovetop --- and the best part?  It&#39;s packed with flavors!

Swedish Beef Stew Recipe (Kalops)

kg beef (about 1 pound)

tbsp flour

& 1/2 cups stock

pcs bay leaf

onions,

medium carrots, ((chopped at about 1/2-inch))

salt and pepper, (to season)

Season beef with salt (generously) and pepper.

Dust them with flour and try to coat them evenly with it.

Pour oil into a large saucepan and set the pan over medium-high heat.

Once the oil is ready, slowly add the pieces of beef while leaving some space in between --- do not overcrowd the pan.

Brown the beef on all sides, adjusting the heat to medium if needed.  

Depending on the size of your pan, you might need to cook the meat in batches.

Place all the browned beef back into the pan and pour the stock.

Add salt, pepper, allspice, and bay leaf; then mix to combine.

Cover your Swedish beef stew with a lid and bring to a boil.

Adjust the heat to low and simmer for at least 60 minutes, occasionally stirring to make sure nothing will stick at the bottom of the pan.

Remove the lid, taste, and adjust the seasoning of your kalops, if needed.

Add the chopped onions and carrots, then mix.

Place the lid back on and continue simmering for 40 to 60 minutes or until the beef becomes tender.

Transfer your Swedish stew into serving plates and enjoy!

Peposo Recipe (Tuscan Beef Stew with Red Wine)

peppercorns

lbs beef ((chuck))

garlic, (minced)

tomato sauce

dry red wine

Start preparing peposo by preheating your oven to 180°C (350°F).

Crush the peppercorns for this peppery beef stew --- do not ground them.

In a Dutch oven, combine beef with the crushed peppercorns and salt.

Add garlic and tomato sauce.

Pour red wine into the beef.  (You might not need to use the entire bottle; it should be just enough to cover the meat).

Mix to combine all the ingredients then cover with the lid.

Place in the oven for 3 hours.

Take out of the oven, taste your peposo, and adjust seasoning if required.

Mix, place the lid back on, and return in the oven for another 30 minutes.

Transfer your peposo into bowls or plates.

Serve.

Tuscan Beef Stew with Red Wine (Peposo)

Sous vide literally translates to "cooking under vacuum". It's so simple, but the results are stunning. You vacuum seal your food, place in a container of water, then use a heated water circulator (sous vide machine) to gently &amp; consistently heat the food at a constant temperature. In our case, the end product was a delicious, unbelievably tender, and evenly cooked rib roast.

Wash and dry your fresh herbs. Peel and crush the garlic.

Next, take the meat and pat dry. Then, on a meat safe cutting board, rub the seasoning mix on the roast &amp; bones until evenly covered.

Measure your roast by it's longest dimension and double that size to cut your vacuum seal bag. Using a vacuum sealer (we use a Food Saver), seal one end of the cut plastic. You want a long 'tail' on the bag because the larger the protein, the more juices will climb up when you seal it. It's difficult to seal the bag if it's wet at the top.

Place your roast in the bag along with the fresh herbs and crushed garlic (put those on the bone side).

Seal the open end of the vacuum bag, making very sure that it is a completely sealed seam.

Fill your container half-way full with water and set your sous vide machine to 134F (you can use 130F-135F, depending on your preference).

Submerge the bagged roast into the sous vide machine (make sure it's completely covered!) and leave to cook for 18-24 hours.

After cooking for 18-24 hours, you're ready to eat!

Retrieve your roast from the sous machine and carefully open the vacuum. Save the jus - it's been flavored by the herbs &amp; garlic and is totally delicious spooned over the meat!
