This recipe for the BEST Cheeseburger ever is so freaking delicious. It is a perfect copycat of the acclaimed best burger in the nation (Au Cheval). I&#x27;ll even tell you the secret ingredient.

Mix mustard and mayonnaise in a small bowl and set aside.

Form your beef into balls (something between a golf ball and tennis ball) and then smash them to be very thin.

Add a generous pinch of salt to each patty.

Add sunflower oil and beef tallow to a very hot skillet and carefully rotate skillet to spread the grease.

Add beef patties and make sure not to crowd them at all because you want them to cook quickly with a consistent hot temperature. Each burger will get 2 patties.

Flip the patties once they’ve formed some crust and add a slice of American cheese to each patty.

Once the patty is cooked (approximately 1 minute to 1 1/2 minutes in total, depending on your desired level of doneness), turn off the heat and remove your patties to a clean plate.

Add buns into oil for about 15 seconds to give them some flavor and toast them a bit.

Remove buns from heat and add some of that dijonnaise sauce you made, using dijon and mayo, to both sides of your buns.

Add two cheeseburger patties per bun, top with some of that chopped red onion and sliced pickle, and place the top of the bun over it. Enjoy!

Ingredients:

⅛ cup of Dijon Mustard (Sir Kensington’s brand is preferred because the flavor is wonderful)
¼ cup of Mayonnaise (Again, Sir Kensington’s makes the best mayo and it’s natural with ingredients that are actually good for you!)
1 ⅓ pounds of 15% fat Ground Beef (If you can, try to find grass-fed, hormone-free beef)
Salt
1 tablespoon Sunflower Oil
1 teaspoon Beef Tallow (AKA Beef Fat; I found mine at Sprouts Market; I know they have it at Whole Foods. You could also just use butter, but the flavor will be a bit lighter.)
8 slices of American Cheese
4 Brioche Hamburger Buns (I found them at Whole Foods. I know Turano brand makes them as well.)
¼ Red Onion, finely chopped 
1 Dill Pickle, sliced thinly (Try to find some without added dyes—scary!)

How to Make the Best Cheeseburger EVER

Can’t decide how to break in your new grill? This easy, no flip burger recipe is a great way to get familiar with your new Silverbac, Grilla or Kong. Be prepared to taste the juiciest burger ever. You’ll never use your gas grill again! Use your favorite burger toppings to customize your taste. We recommend a good pretzel bun with tomatoes, pepper jack cheese, and Gold N’ Bold sauce.

To begin, you’ll want to start with very cold but not frozen beef patties. This will help ensure that you don’t overcook your burgers. Generously sprinkle on our Beef Rub or All Purpose Rub and gently massage into both side of the patty. As an alternative, you can also season with salt and pepper and some garlic salt.

Preheat your Silverbac to 250 degrees Fahrenheit and cook for about 45 minutes. Depending on the thickness of your burgers you will want to check on them after about 30-45 minutes, but there’s no need to flip. For a medium rare burger, we suggest cooking to about 155 degrees.

After the first 30-40 minutes, if you like melted cheese on your burger go ahead and add your favorite variety. Close your grill back up and let them finish up for another 10 minutes before removing. For an added punch of flavor, top your burger off with a drizzle of Grilla Grill’s Gold ‘N Bold sauce. Enjoy!

Mix all the relish ingredients together in a small bowl. Season with salt and pepper and set aside.

Put the beef mince in a bowl, season and stir in the Worcestershire sauce and parsley. With wet hands, form into 4 burgers, then press a few feta cubes into the centre of each and press the mince back over to reshape, covering the cheese completely. (Cover and chill for up to 12 hours, if you like, or see freezing tip). Preheat the grill to medium.

Grill the burgers for 3-4 minutes, turning halfway, until cooked through. 

Place some rocket on each roll, top with a burger and some relish. Serve with mayonnaise, if you like.

Smash Burgers Recipe

canola oil

Brush

Brush a 12-inch cast iron or stainless steel skillet with oil and set it over medium heat for 3-4 minutes. While the skillet heats, form ¼ pound beef into very loose 2-inch thick patties. The meat should barely hold its shape. Generously season one side of the patty with salt &amp; pepper.

Butter

Butter the inside on the buns and place (buttered-side down) on the hot skillet. Cook just until the buns are nicely toasted (watch closely). Set the buns aside.

Heat

Increase the heat under the skillet to medium-high and heat the skillet an additional 1 minute.

Sear

Set two patties, seasoned-side down, on opposite sides in the skillet and firmly press down on them until they are about 4-4½-inches wide and ½-inch thick. Season the top-side of the burgers with salt &amp; pepper.

Cook

Cook the patties, undisturbed, until the outer edges are dark caramel brown.

Melt

Flip the burgers and cook 1 minute. Add cheese and cook until desired doneness, about 1 more minute for medium-well. (If you like a medium-rare burger, add the cheese right after flipping the burger and cook just 1 minute.)

Repeat

Set the cooked burgers, cheese side up, on a paper towel-lined plate and repeat the cooking process with the remaining burger patties.

Garnish

Place the burgers on the buns and add your favorite condiments and toppings.
