Lima beans don't have to be boring and bland. Bring them to life by making them tasty and full of flavour with this easy to follow recipe.

Easy Lima Beans

vegetable oil

onion,

garlic, pressed

turmeric powder

water

dry lima beans, pre-soaked

carrot, chopped or sliced (optional)

salt

black pepper

In a medium frying pan, heat the vegetable oil over medium heat.

Saute the onions for 2 minutes and then add the garlic and turmeric. Continue to saute until the onions are soft and translucent. Set aside.

In a medium saucepan, bring 3 cups of water to a boil. Add the lima beans, sautéed onions and garlic, carrot, italian seasoning, salt and pepper.

Bring to a boil, then reduce heat to low and simmer (covered) for 40 minutes until the lima beans are soft and tender. If the beans are still hard, continue to cook and check every 5-10 minutes until the beans are soft and tender.

Turn off the heat and set the saucepan aside for 20 minutes (still covered).

Reheat for serving. Add more salt, pepper or italian seasoning to taste.

First time I have ever cooked lima beans!  They came in my grocery order as a substitute for what I had ordered. Decided rather than return I would find a recipe and give them a try.  This was really good and really easy.  However, my plan had been to make soup my main dish for dinner.  Added some Costco rotisserie chicken breast, a little broth and did increase the spices.  Will definitely make again.

Easy Canned Butter Beans

olive oil

onion

garlic (minced)

butter beans (rinsed and drained)

vegetable broth

thyme

Coarse kosher salt and black pepper (to taste)

Paprika

In a medium pot, heat olive oil over medium heat.

Add the onion and cook 5 minutes, stirring frequently, until softened.

Add the garlic and cook, stirring, for 15 seconds.

Add the beans, vegetable broth, thyme, salt, and pepper, stir, and bring to a boil. Lower the heat to a simmer and let cook, stirring occasionally, until the liquid has reduced and the beans are hot, 15-20 minutes.

Serve warm, sprinkled with paprika.
