easy cheese dip

This smooth and creamy cheese dip has real cheese (no wobbly blocks of cheese-product required!), cooks up in the microwave in just a few minutes, and goes great with some chips and guacamole on the side. 

Easy Cheese Dip (in the Microwave!)

fontina cheese, shredded

cheddar cheese, shredded

salt

cornstarch

evaporated milk

tomatoes

cilantro,

In a microwave-safe bowl, combine the fontina, cheddar cheese, salt, and cornstarch. The cornstarch should evenly coat the cheese. Pour the milk into the bowl and add the diced tomatoes with green chile.

Place the bowl in the microwave and cook it for 1 minute. Stir the dip and microwave it for another 30 seconds and stir again. Cook it for 30 seconds more and stir it again. At this point, it should be smooth, but if it&#8217;s not, continue cooking it for 30-second increments and stirring until it is smooth.

Can't imagine this won't be delicious.  Off to buy cheese and just in time for Cinco de Mayo!  Would never have thought of cornstarch to thicken!

I had to improvise and wanted something quick.  I worked with what I had, store-bought shredded sharp cheddar and a little parmesan.  My experimental batch used more evaporated milk and came out a little thick, but it was tasty and did the job.

Made this over the weekend for football watching!  It was fabulous!  I used 8 oz. of CoJack (colby Montery Jack blend), and it was great. The Rotel added just enough spice.  I will definitely make this again.  Thanks!

Harissa Chicken paired with rice is a Tunisian inspired recipe that uses a sweet and smokey red chili pepper paste to create a bold, spicy and flavorful dish

Harissa chicken

extra virgin olive oil

harissa paste

garlic (crushed

paprika

cumin

black pepper

chicken breast

Rice (for serving)

mint (for serving)

Lime wedges (for serving)

In a large bowl, combine olive oil, harissa, garlic, paprika, cumin, salt and pepper. Add the chicken to the spice mix and mix well to incorporate. Refrigerate for at least 2 hours or overnight.

Heat a large saucepan on medium without any oil, then transfer the chicken from the bowl to the saucepan. Cook until the chicken is well done, about 8-10 minutes. When it’s cooked, squeeze some fresh lime juice on top of the chicken.

Serve over rice with a lime wedges and fresh mint, if desired. Due to the spice level, plain yogurt also works really well with the recipe.

Multiple cheeses, Velveeta, jalapeños, and tomatoes make the cheesiest, creamiest queso dip, all in a Crockpot!

Slow Cooker Queso Recipe

Fire-Roasted Tomatoes

whole fat evaporated milk

lime, juiced

white American block cheese (cubed)

yellow American block cheese (cubed)

Velveeta Queso Blanco cheese (cubed)

Supremo Mexican Blend cheese (shredded)

cilantro (chopped)

olive oil

jalapeno peppers (seeded & ribs removed, diced)

onion

red pepper flakes

chili powder (optional)

Spray

Spray a large slow-cooker with nonstick cooking spray and set the temperature to HIGH.

Add the tomatoes, milk, lime juice, cheeses and cilantro; mix well.

Place

Saute

Place the oil, onions and jalapeno peppers in a medium skillet set over medium heat. Sauté the vegetables until tender and translucent, about 3-4 minutes.

Add cumin, red pepper flakes and chili powder; stir well and cook an additional 30 seconds, stirring continuously.

Add the sautéed vegetables to the cheese mixture and stir well.

Stir

Replace the lid leaving it slightly ajar. Stir the cheese several times until the cheese is completely melted, about 30 minutes.

Heat

Lower the temperature to WARM and stir about every 15-20 minutes. If needed, add a little evaporated milk if it thickens during warming.

Serve

Serve with your favorite chips/vegetables/crackers.

In a bowl, combine the softened spreadable cheese spread and cream cheese using a hand mixer until fully incorporated and smooth.

ricotta (full fat)

sour cream (full fat)

salt (to taste)

black pepper (to taste)

tbsp honey

lemon juice

tsp crushed red chili flakes

tsp za’atar (for topping)

tsp black & white sesame seeds (for topping)

pita chips (for serving)

naan (for serving)

raw veggies (for serving)

Add feta, ricotta and sour cream to a food processor. Season with salt and pepper. Blend on high until smooth, about 2-3 minutes. Taste, add salt and pepper.

sautéing

In a saucepan, heat olive oil over low. Add garlic, sauté until fragrant, about 1 minute. Turn off the heat. Stir in honey, lemon juice and chili flakes. Season with salt and pepper.

serving

Serve the whipped feta drizzled with spicy honey. Top with chives, za’atar, sesame seeds, some extra freshly ground black pepper and chili flakes. Enjoy with pita chips, naan or on a veggie platter.

Feta, ricotta and sour cream should be at room temperature.

This was absolutely to die for! I keep thinking about the flavors and how I might use this in other recipes. It’s that good!

This was a winning recipe! It was absolutely delicious. Rave reviews as well from guests. The only thing I struggled with is the honey mixture was quite runny and so made the dip a bit soupy. Is there a fix for this? I followed the recipe exactly so I’m not sure what I did wrong.

Have made this dip before but this time after putting into serving dish, and spooning honey mixture, dip turned into a watery mess that would not even grab onto pita chips.  It was like I poured water into the dish.  Have no idea what could have cause this.  Has this happened to anyone else?  Please email me if it has or if you have any suggestions - love this dip!!

I made this and the taste was amazing. But the dip was very “liquidy.”  Then it did not look appealing. I wonder why?  Was it the consistency of the honey or any other ideas?  I do want to make it again with the correction. Thanks
